Roasted Chicken Drumsticks with Potatoes & Fresh Salad
Ingredients
For the chicken drumsticks

3–4 chicken drumsticks

1 tbsp olive oil
-
1 tsp paprika
-
1 tsp garlic powder
-
1 tsp onion powder
-
½ tsp dried thyme or oregano
-
½ tsp black pepper
-
½ tsp salt
-
Optional: 1 tbsp lemon juice or honey for flavor
For the roasted potatoes
-
2–3 medium potatoes, cut into wedges
-
1 tbsp olive oil
-
½ tsp paprika
-
½ tsp garlic powder
-
½ tsp dried parsley
-
Salt & pepper to taste
For the fresh salad
-
1 cup chopped lettuce
-
½ cup cucumber slices
-
½ cup cherry tomatoes, halved
-
¼ cup red cabbage, shredded
-
2 tbsp feta cheese, crumbled
-
Optional: chopped parsley
Simple salad dressing
-
1 tbsp olive oil
-
1 tbsp lemon juice
-
½ tsp honey
-
Salt & pepper to taste
Garnish
-
Lemon slice
-
Fresh herbs
Instructions

1. Prepare the chicken
-
Preheat oven to 200°C (400°F).
-
Pat the drumsticks dry.
-
In a bowl, mix olive oil, paprika, garlic powder, onion powder, thyme, salt, and pepper.

Coat the drumsticks evenly in the seasoning.
-
Place on a baking tray and roast for 35–40 minutes, flipping halfway, until golden and cooked through.
2. Prepare the roasted potatoes
-
Toss potato wedges with olive oil, paprika, garlic powder, parsley, salt, and pepper.

Spread on a tray in a single layer.
-
Roast for 25–30 minutes or until crispy and golden.
3. Make the salad
-
Combine lettuce, cucumber, tomatoes, and red cabbage in a bowl.
-
Whisk together olive oil, lemon juice, honey, salt, and pepper for the dressing.
-
Drizzle over the salad and toss lightly.
-
Add crumbled feta on top.
4. Assemble the plate
-
Arrange roasted drumsticks, potato wedges, and salad on a plate.
-
Add a slice of lemon for freshness.
-
Garnish with parsley or herbs.
5. Serve
-
Enjoy hot chicken + potatoes with refreshing salad on the side.
