Carb Bacon Cheddar Mini Cheese Balls



Ingredients:

  • 8 oz cream cheese, softened

  • 1 cup shredded cheddar cheese

  • 1/2 cup cooked bacon, crumbled

  • 1 tablespoon green onions, finely chopped

  • 1/4 teaspoon garlic powder

  • 1/4 teaspoon onion powder

  • Salt and pepper, to taste

  • 1/4 cup almond flour (optional, for coating)

  • 1/4 cup chopped parsley (for garnish)

Instructions:

1. Prepare the Cheese Mixture:

  • In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, crumbled bacon, green onions, garlic powder, and onion powder.

  • Stir everything together until fully combined. Season with salt and pepper to taste.

2. Form the Mini Cheese Balls:

  • Scoop out small portions of the cheese mixture and roll them into mini balls using your hands. Aim for about 1-inch balls.

  • If you prefer a more textured exterior, you can roll the cheese balls in almond flour to give them a light crust. Alternatively, skip this step if you want to keep them low-carb.

3. Chill the Cheese Balls:

  • Place the mini cheese balls on a plate or tray and refrigerate for at least 30 minutes to help them set and become firmer.

4. Garnish and Serve:

  • Once chilled, garnish the cheese balls with freshly chopped parsley for a pop of color.

  • Serve them as a delicious, low-carb snack at parties, gatherings, or as a savory appetizer.

Tips:

  • You can substitute the almond flour with crushed nuts (like pecans or walnuts) if you want a different texture or flavor.

  • If you want to make these even more flavorful, try adding a dash of hot sauce, smoked paprika, or cayenne pepper to the mixture.
