According to the report, Ms. Li from Fuzhou, China, was well known among her neighbors for maintaining what appeared to be a healthy lifestyle. After retiring at the age of 51, she became especially devoted to healthy eating. She rarely ate fried food, preferred steamed dishes, and prepared fresh meals every day. Friends and family believed she would enjoy a long and healthy life.

However, tragedy struck unexpectedly.

For several months, Ms. Li experienced persistent mouth ulcers that refused to heal. Although she used medication, the ulcers repeatedly returned and gradually became more severe. When the pain became unbearable, she finally visited a hospital, where doctors diagnosed her with advanced oral cancer that had already spread to nearby tissues.

Only three months after receiving the diagnosis, she passed away despite undergoing treatment.

2. Frequently Eating Pickled Foods

To make steamed buns more flavorful, Ms. Li often paired them with pickled vegetables, salted cabbage, or preserved meat.

Doctors explained that although rinsing or heating pickled foods may reduce some salt content, it cannot completely eliminate harmful substances. Pickled foods are often high in sodium and may contain nitrites, which can react with compounds in the digestive system to form nitrosamines—chemicals that have been linked to an increased risk of cancer. Family members said Ms. Li was careful not to waste food. When grains or cereals became slightly moldy, she often removed the visibly spoiled portions and continued eating the rest.
