Burrata with Roasted Plums, Pistachios & Thyme




Ingredients

  • 1–2 balls burrata cheese

  • 3–4 ripe plums, halved and pitted

  • 2 tablespoons honey or maple syrup

  • 1–2 tablespoons olive oil

  • 1 teaspoon balsamic vinegar (optional)

  • A handful of pistachios, roughly chopped

  • Fresh thyme sprigs

  • A pinch of salt

  • A pinch of black pepper

  • Crusty bread, crostini, or crackers for serving

Instructions

1.  Preheat the oven to 190°C (375°F).

2.  Place the plum halves on a baking tray, cut side up.

3.  Drizzle with olive oil, honey, and a splash of balsamic vinegar if using.

4.  Sprinkle lightly with salt, pepper, and a few thyme leaves.

5.  Roast the plums for 15–20 minutes, or until soft, caramelized, and slightly jammy.

6.  Remove from the oven and let them cool slightly.

7.  Place the burrata on a serving plate and arrange the warm roasted plums around it.

8.  Spoon some of the roasting juices over the top.

9.  Sprinkle with chopped pistachios and extra fresh thyme.

10.  Serve immediately with warm bread or crostini.

Tip

For extra brightness, finish with a drizzle of lemon zest–infused olive oil or a touch of chili honey.
