Japanese Ebi Fry Omurice with Curry Sauce
Fluffy omelette rice topped with crispy fried shrimp, rich Japanese curry, and creamy tartar sauce.
Ingredients
For the Curry Sauce

1 tbsp butter
-
1 small onion, diced
-
1 carrot, diced
-
1 potato, diced
-
2 cups water or chicken stock
-
2 blocks Japanese curry roux (Vermont, Golden Curry, or Java Curry)
-
1 tsp soy sauce (optional)
For the Rice
-
2 cups cooked Japanese rice
-
1 tbsp butter
-
2 tbsp diced onion
-
2 tbsp mixed vegetables (peas, carrots, corn)
-
2 tbsp ketchup
-
Salt & pepper to taste
For the Omelette
-
2–3 eggs
-
1 tbsp milk or cream
-
A pinch of salt
-
1 tsp butter
For the Ebi Fry (Fried Shrimp)
-
6 large shrimp, peeled & deveined
-
Flour
-
1 beaten egg
-
Panko breadcrumbs
-
Salt & pepper
-
Oil for deep frying
For the Tartar Sauce
-
3 tbsp mayonnaise
-
1 tbsp chopped pickles
-
1 tbsp chopped onion
-
½ tsp lemon juice
-
Pinch of salt & pepper
Instructions

1. Make the Japanese Curry
-
Melt butter in a pot and sauté onion until fragrant.

Add carrot and potato; stir for 2–3 minutes.
-
Pour in water/stock and simmer until vegetables soften (10–12 minutes).
-
Turn off heat, add curry roux blocks, stir until dissolved.
-
Turn heat back on low and simmer until thickened.
-
Add soy sauce for extra flavor (optional).
2. Prepare the Fried Rice

Melt butter in a pan.
-
Sauté onion and mixed vegetables.
-
Add cooked rice and mix well.
-
Add ketchup, salt, and pepper.
-
Stir-fry until everything blends and becomes slightly caramelized.

Shape the rice into an oval mound on a plate.
3. Make the Ebi Fry

Season shrimp with salt and pepper.
-
Coat shrimp in flour → egg → panko.
-
Deep fry until golden and crispy.
-
Drain on paper towels.
4. Make the Omelette

Whisk eggs with milk and a pinch of salt.
-
Heat butter in a non-stick pan over medium heat.
-
Pour in egg mixture and swirl gently.
-
When half-cooked and still creamy in the center, slide it onto the rice mound.
(Keep it soft and fluffy for that perfect omurice texture.)
5. Make the Tartar Sauce
Mix mayonnaise, pickles, onion, lemon juice, salt, and pepper.
6. Assemble the Dish

Pour Japanese curry around the rice and omelette.

Place crispy shrimp on top of the omelette.

Add a generous spoonful of tartar sauce over the shrimp.

Garnish with shredded seaweed or herbs.
