Lobster Thermidor


Lobster Thermidor Recipe

Ingredients:

For the Lobster:

  • 4 lobster tails (fresh or thawed)

  • 1 tbsp olive oil

  • Salt and pepper to taste

  • 1 lemon (for squeezing and zesting)

For the Sauce:

  • 2 tbsp unsalted butter

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1/4 cup brandy or white wine (optional)

  • 1/2 cup heavy cream

  • 1/2 cup milk

  • 1 cup grated Gruyère cheese (or a mix of Gruyère and Parmesan)

  • 1 tbsp Dijon mustard

  • 1 tsp fresh lemon juice

  • 1 tbsp fresh parsley, chopped (for garnish)

  • Salt and pepper to taste

Instructions:

1. Prepare the Lobsters:

  • Preheat the oven to 400°F (200°C).

  • Bring a large pot of salted water to a boil. Place the lobster tails into the boiling water and cook for 5-6 minutes, just until the lobster meat turns opaque. Do not overcook.

  • Remove the lobster tails from the water and let them cool slightly.

  • Using kitchen scissors or a sharp knife, cut the top shell of each lobster tail down the center, and carefully pull the lobster meat out, keeping it in one piece.

  • Slice the lobster meat into bite-sized pieces and set aside.

2. Make the Sauce:

  • In a large skillet, melt the butter over medium heat.

  • Add the chopped onion and garlic, and sauté until softened and fragrant, about 3-4 minutes.

  • If using brandy or white wine, carefully add it to the pan and let it cook off for 1-2 minutes, reducing slightly.

  • Add the heavy cream and milk, and bring to a simmer. Allow the mixture to thicken, stirring occasionally, about 3-5 minutes.

  • Stir in the grated cheese, Dijon mustard, lemon juice, salt, and pepper. Continue stirring until the sauce is smooth and creamy.

3. Combine Lobster and Sauce:

  • Add the lobster meat to the sauce and gently fold it in, making sure it's well coated with the creamy mixture. Taste and adjust seasoning with more salt and pepper if necessary.

4. Stuff the Lobster Shells:

  • Carefully place the lobster shells in a baking dish.

  • Spoon the lobster and sauce mixture back into each lobster shell, filling them up evenly.

  • Sprinkle the tops with a little extra grated cheese.

5. Broil the Lobster Thermidor:

  • Place the baking dish under the broiler for about 3-5 minutes or until the cheese is melted and golden brown on top. Keep a close eye on it to avoid burning.

6. Garnish and Serve:

  • Remove the lobster from the oven, garnish with freshly chopped parsley, and a squeeze of lemon juice.

  • Serve immediately, accompanied by a side of vegetables, rice, or a light salad.

Notes:

  • For a richer flavor, you can add a small amount of lobster or seafood stock to the sauce.

  • If you want a crispy top, you can sprinkle breadcrumbs on top of the cheese before broiling.

  • Serve with a glass of white wine for the perfect pairing.
