Ingredients
For the Chicken

2 chicken breasts

2 tbsp butter

1 tbsp olive oil

3 cloves garlic, minced

1 tsp thyme
-
1 tsp rosemary
-
Salt & black pepper
-
Fresh parsley for garnish
For the Mashed Potatoes
-
3–4 large potatoes, peeled & boiled
-
2 tbsp butter
-
½ cup warm milk or cream
-
Salt & pepper to taste
For the Roasted Carrots
-
6–8 whole carrots (or cut into large pieces)

1 tbsp olive oil
-
1 tsp thyme
-
Salt & pepper
Instructions

1. Roast the Carrots
-
Preheat oven to 200°C (400°F).
-
Toss carrots with olive oil, thyme, salt, and pepper.

Roast for 20–25 minutes until soft with slight caramelization.
2. Prepare the Mashed Potatoes
-
Mash boiled potatoes until smooth.
-
Mix in butter, milk/cream, salt, and pepper.
-
Adjust creaminess to your liking.
3. Cook the Herb Butter Chicken
-
Season chicken with salt, pepper, thyme, and rosemary.
-
Heat olive oil in a pan over medium heat.
-
Sear chicken on both sides until golden.

Add butter and garlic, spooning the melted herb butter over the chicken.
-
Cook until the chicken is juicy and fully cooked.
-
Slice the chicken for serving.
4. Assemble the Dish

Add a generous scoop of mashed potatoes.
-
Place sliced herb-butter chicken on top.
-
Add roasted carrots on the side.
-
Spoon leftover garlic-herb butter from the pan over the chicken.

Garnish with parsley.
