French Onion Soup – Rich, Comforting & Classic

This iconic French soup is warm, cozy, and deeply flavorful. Caramelized onions simmered in beef broth, topped with toasted baguette slices and melted Gruyère cheese — a perfect bowl for cold evenings or whenever you want true comfort food.

For the Soup

  • 4–5 large onions, thinly sliced

  • 3 tablespoons butter

  • 1 tablespoon olive oil

  • 2 cloves garlic, minced

  • 1 tablespoon flour

  • ½ cup white wine (optional but recommended)

  • 6 cups beef broth

  • 1 bay leaf

  • 1 teaspoon fresh thyme (or ½ teaspoon dried)

  • Salt and black pepper

For the Topping

  • Baguette slices, toasted

  • Gruyère cheese (or Swiss/Mozzarella), grated


Instructions

1. Caramelize the Onions

  1. Melt butter and olive oil in a large pot over medium heat.

  2. Add sliced onions and cook slowly for 25–35 minutes, stirring often.

  3. Onions should become golden brown and caramelized.


2. Build the Flavor

  1. Add garlic and cook for 1 minute.

  2. Sprinkle flour and stir — this helps thicken the soup.

  3. Pour in white wine and let it simmer until reduced.

  4. Add beef broth, thyme, bay leaf, salt, and pepper.

  5. Simmer on low heat for 20–25 minutes.

Remove bay leaf before serving.


3. Prepare the Bread & Cheese

  1. Toast baguette slices until crisp.

  2. Grate a generous amount of Gruyère cheese.


4. Assemble and Broil

  1. Ladle hot soup into oven-safe bowls.

  2. Place toasted baguette slices on top of the soup.

  3. Cover generously with cheese.

  4. Broil for 3–5 minutes until the cheese melts and becomes golden and bubbly.
