Ingredients
For the Crepes

¾ cup all-purpose flour

For the Filling

1 cup heavy whipping cream

2 tablespoons sugar

1–2 ripe mangoes, diced

Extra whipped cream for topping (optional)
Instructions

1. Make the Crepe Batter

In a bowl, whisk milk, eggs, sugar, vanilla, and melted butter.

Add the flour and salt. Whisk until smooth and lump-free.

Let the batter rest for 10–15 minutes for best texture.
2. Cook the Crepes

Heat a non-stick pan over low–medium heat.

Pour a thin layer of batter and swirl to coat the pan.

Cook for 1–2 minutes, flip gently, and cook another 30 seconds.

Repeat until all crepes are made. Let them cool completely.
3. Make the Whipped Cream

Whip heavy cream, sugar, and vanilla until soft, fluffy peaks form.

Chill until ready to use.
4. Assemble the Crepe Rolls

Lay one crepe flat on a clean surface.

Spread a layer of whipped cream.

Add mango pieces along one edge.

Roll gently but firmly into a log.

Trim edges for a clean look.

Pipe whipped cream on top and garnish with a mango cube or herb sprig.
