Mango Crepe Roll Cake – Soft, Creamy & Dreamy

These mango crepe rolls are silky, light, and filled with fresh mango chunks and fluffy whipped cream. Every bite feels like a sweet cloud with fruity freshness — perfect for summer days, tea time, or a pretty café-style dessert at home.


Ingredients

For the Crepes

  • 1 cup milk

  • 2 large eggs

  • 1 tablespoon sugar

  • 1 teaspoon vanilla extract

  • 1 tablespoon melted butter

  • ¾ cup all-purpose flour

  • A pinch of salt

For the Filling

  • 1 cup heavy whipping cream

  • 2 tablespoons sugar

  • 1 teaspoon vanilla extract

  • 1–2 ripe mangoes, diced

  • Extra whipped cream for topping (optional)


Instructions

1. Make the Crepe Batter

  1. In a bowl, whisk milk, eggs, sugar, vanilla, and melted butter.

  2. Add the flour and salt. Whisk until smooth and lump-free.

  3. Let the batter rest for 10–15 minutes for best texture.


2. Cook the Crepes

  1. Heat a non-stick pan over low–medium heat.

  2. Pour a thin layer of batter and swirl to coat the pan.

  3. Cook for 1–2 minutes, flip gently, and cook another 30 seconds.

  4. Repeat until all crepes are made. Let them cool completely.


3. Make the Whipped Cream

  1. Whip heavy cream, sugar, and vanilla until soft, fluffy peaks form.

  2. Chill until ready to use.


4. Assemble the Crepe Rolls

  1. Lay one crepe flat on a clean surface.

  2. Spread a layer of whipped cream.

  3. Add mango pieces along one edge.

  4. Roll gently but firmly into a log.

  5. Trim edges for a clean look.

  6. Pipe whipped cream on top and garnish with a mango cube or herb sprig.


Serve & Enjoy
