Ingredients

For the Pastry Shells

  • 1 sheet puff pastry (thawed)

  • 1 egg (for egg wash)

  • Powdered sugar for dusting

For the Cream Filling

  • 1 cup heavy whipping cream

  • 2 tablespoons sugar

  • 1 teaspoon vanilla extract

Toppings

  • Fresh strawberries

  • Fresh blueberries

  • Extra powdered sugar

1. Prepare the Puff Pastry Shells

  1. Preheat your oven to 200°C (400°F).

  2. Roll out the puff pastry sheet slightly and cut into circles using a cookie cutter or a round cup.

  3. Using a smaller cutter, gently score (not cut through) a smaller circle inside each piece — this will help create the raised tart edges.

  4. Brush lightly with egg wash.

  5. Bake for 12–15 minutes, or until golden, puffy, and crispy.

  6. Let cool, then press the inner circle down gently to create space for the cream.


2. Make the Whipped Cream Filling

  1. In a chilled bowl, whip heavy cream, sugar, and vanilla until soft, fluffy peaks form.

  2. Don’t overwhip — you want it silky, cloud-like, and smooth.


3. Assemble the Tarts

  1. Spoon or pipe the whipped cream into the center of each puff pastry base.

  2. Top with fresh strawberries and blueberries.

  3. Finish with a light dusting of powdered sugar for that bakery-perfect look.
