Mixed Berry Cheesecake – Creamy, Fruity & Stunning

A velvety smooth cheesecake resting on a buttery crust, topped with a glossy mixed-berry sauce and fresh strawberries, blueberries, and mint. A show-stopping dessert that tastes as good as it looks.


Ingredients

For the Crust

  • 200 g (2 cups) graham cracker crumbs

  • 80 g (6 tbsp) melted butter

  • 2 tbsp sugar

For the Cheesecake Filling

  • 450 g (16 oz) cream cheese, softened

  • 1 cup heavy cream

  • 1 cup powdered sugar

  • 1 tsp vanilla extract

  • Juice of ½ lemon

For the Berry Sauce

  • 1 cup blueberries

  • 1 cup strawberries (chopped)

  • 3 tbsp sugar

  • 1 tbsp lemon juice

  • 1 tsp cornstarch + 1 tbsp water (optional, for thickening)

For Decoration

  • Fresh berries (strawberries, blueberries)

  • Mint leaves

1. Make the Crust

  1. Mix graham crumbs, melted butter, and sugar.

  2. Press firmly into the bottom of a springform pan.

  3. Chill in the fridge for 20 minutes.


2. Make the Filling

  1. Beat cream cheese until smooth and fluffy.

  2. Add powdered sugar, lemon juice, and vanilla.

  3. Add heavy cream and whip until thick and airy.

  4. Spread filling evenly over the chilled crust.

  5. Refrigerate for at least 4 hours (or overnight for best results).


3. Make the Berry Sauce

  1. Add berries, sugar, and lemon juice to a saucepan.

  2. Simmer 5–7 minutes until berries soften and release juices.

  3. Add cornstarch mixture if you want a thicker sauce.

  4. Cool completely.


4. Assemble

  1. Slice cheesecake and drizzle generously with berry sauce.

  2. Top with fresh strawberries, blueberries, and mint leaves.
