Cheese-Stuffed Mushroom Chicken Breast (Restaurant-Style)

A juicy chicken breast stuffed with buttery mushrooms and smothered in golden, melty cheese — a show-stopping dish that tastes like fine dining.


Ingredients

For the Chicken

  • 2 large chicken breasts

  • 1½ cups mushrooms (sliced)

  • 2 tbsp butter

  • 2 cloves garlic, minced

  • 1 tbsp fresh rosemary or thyme (or 1 tsp dried)

  • 1 tsp paprika

  • 1 tsp black pepper

  • 1 tsp salt

  • 2 tbsp olive oil

For the Cheese Sauce / Topping

  • 1 cup shredded mozzarella

  • ½ cup shredded cheddar (optional, for color)

  • ½ cup heavy cream

  • 1 tbsp butter

  • 1 tbsp flour

  • Salt & pepper to taste

1. Prepare the Mushroom Filling

  1. In a pan, melt 2 tbsp butter over medium heat.

  2. Add garlic and sauté until fragrant.

  3. Add the sliced mushrooms and cook until golden and soft.

  4. Season with salt, pepper, and rosemary/thyme.

  5. Turn off the heat and let the filling cool slightly.

2. Prepare the Chicken Breasts

  1. Place each chicken breast on a board and carefully cut a deep pocket along the side (do NOT cut through).

  2. Rub the chicken all over with olive oil.

  3. Season generously with salt, pepper, and paprika.

3. Stuff the Chicken

  1. Spoon the mushroom mixture into each chicken pocket.

  2. Use toothpicks to secure the opening if needed so the filling stays inside.

4. Sear the Chicken

  1. Heat a skillet with a little oil.

  2. Sear chicken on each side for 2–3 minutes until lightly browned.

  3. Transfer to a baking dish.

5. Make the Cheese Sauce

  1. Melt 1 tbsp butter in a small saucepan.

  2. Add 1 tbsp flour and stir for 30 seconds.

  3. Slowly pour in heavy cream while whisking.

  4. Add mozzarella + cheddar and stir until smooth and melty.

  5. Season with salt and pepper.

6. Assemble and Bake

  1. Pour the cheese sauce over the stuffed chicken breasts.

  2. Add extra shredded cheese on top for that golden crust.

  3. Bake at 200°C (392°F) for 18–22 minutes or until chicken is cooked through and cheese is bubbling.
