Cheese-Stuffed Mushroom Chicken Breast (Restaurant-Style)
A juicy chicken breast stuffed with buttery mushrooms and smothered in golden, melty cheese — a show-stopping dish that tastes like fine dining.
Ingredients
For the Chicken
-
2 large chicken breasts
-
1½ cups mushrooms (sliced)
-
2 tbsp butter
-
2 cloves garlic, minced
-
1 tbsp fresh rosemary or thyme (or 1 tsp dried)
-
1 tsp paprika
-
1 tsp black pepper
-
1 tsp salt
-
2 tbsp olive oil
For the Cheese Sauce / Topping
-
1 cup shredded mozzarella
-
½ cup shredded cheddar (optional, for color)
-
½ cup heavy cream
-
1 tbsp butter
-
1 tbsp flour
-
Salt & pepper to taste
Instructions

1. Prepare the Mushroom Filling
-
In a pan, melt 2 tbsp butter over medium heat.

Add garlic and sauté until fragrant.
-
Add the sliced mushrooms and cook until golden and soft.
-
Season with salt, pepper, and rosemary/thyme.
-
Turn off the heat and let the filling cool slightly.
2. Prepare the Chicken Breasts
-
Place each chicken breast on a board and carefully cut a deep pocket along the side (do NOT cut through).

Rub the chicken all over with olive oil.
-
Season generously with salt, pepper, and paprika.
3. Stuff the Chicken
-
Spoon the mushroom mixture into each chicken pocket.
-
Use toothpicks to secure the opening if needed so the filling stays inside.
4. Sear the Chicken

Heat a skillet with a little oil.
-
Sear chicken on each side for 2–3 minutes until lightly browned.

Transfer to a baking dish.
5. Make the Cheese Sauce
-
Melt 1 tbsp butter in a small saucepan.
-
Add 1 tbsp flour and stir for 30 seconds.
-
Slowly pour in heavy cream while whisking.
-
Add mozzarella + cheddar and stir until smooth and melty.
-
Season with salt and pepper.
6. Assemble and Bake
-
Pour the cheese sauce over the stuffed chicken breasts.
-
Add extra shredded cheese on top for that golden crust.
-
Bake at 200°C (392°F) for 18–22 minutes or until chicken is cooked through and cheese is bubbling.
