Twice-Baked Potatoes with Broccoli and Cheese

Ingredients:

  • 4 large russet potatoes

  • 1 tbsp olive oil

  • Salt and pepper to taste

  • 1 cup broccoli florets (steamed)

  • 1 cup cooked chicken breast, diced (optional)

  • 1 ½ cups shredded mozzarella cheese

  • ½ cup grated Parmesan cheese

  • ½ cup sour cream

  • ¼ cup milk (more if needed)

  • 2 tbsp butter

  • 1 tsp garlic powder

  • ½ tsp onion powder

  • Fresh chives (for garnish, optional)

Instructions:

  1. Prepare the Potatoes:

    • Preheat your oven to 400°F (200°C).

    • Wash the potatoes thoroughly and dry them.

    • Pierce each potato a few times with a fork, rub them with olive oil, and sprinkle with salt and pepper.

    • Place the potatoes directly on the oven rack and bake for about 45 minutes or until they are soft and fully cooked. Let them cool slightly.

  2. Prepare the Filling:

    • While the potatoes are baking, steam the broccoli until tender (about 4-5 minutes). Chop it into small pieces.

    • If using chicken, dice it into small cubes.

    • Once the potatoes are cool enough to handle, cut each potato in half lengthwise.

    • Scoop out the potato flesh, leaving about ¼ inch along the edges to keep the skins intact. Place the potato flesh into a mixing bowl.

  3. Mash the Potatoes:

    • To the bowl with the scooped-out potatoes, add sour cream, butter, garlic powder, onion powder, milk, and half of the mozzarella cheese.

    • Mash the mixture until smooth and creamy. Add more milk if needed to reach your desired consistency.

    • Stir in the steamed broccoli, diced chicken (if using), and Parmesan cheese. Season with salt and pepper to taste.

  4. Fill the Potato Skins:

    • Spoon the mashed potato mixture back into the potato skins. Make sure to pack them in firmly.

    • Top with the remaining mozzarella cheese.

  5. Bake Again:

    • Place the filled potato halves on a baking sheet and return them to the oven.

    • Bake at 375°F (190°C) for about 15-20 minutes, or until the tops are golden brown and the cheese is melted and bubbly.

  6. Garnish and Serve:

    • Garnish with freshly chopped chives, if desired.

    • Serve hot and enjoy!

Notes:

  • You can also add bacon bits or shredded cheddar cheese to enhance the flavor.

  • If you prefer a vegetarian version, simply omit the chicken.

  • These potatoes can be prepared ahead of time and stored in the fridge. Just bake them for a second time when ready to serve.
