Rainbow Veggie Pinwheel Board – Eat the Rainbow!




A swirl of colors, flavors, and textures - healthy, playful, and perfect for any party.

This vibrant pinwheel board is packed with fresh vegetables, creamy spreads, and soft tortillas. It’s fun to assemble, easy to serve, and loved by both kids and adults. Ideal for picnics, potlucks, and colorful snack boards.

Ingredients

For the Pinwheels

  • 4 large flour tortillas (spinach, tomato basil, whole wheat, or plain)

  • 8 oz cream cheese, softened
    (or use hummus for a lighter, dairy-free option)

  • 2 tbsp Greek yogurt (optional, to make the spread smoother)

  • 1 tsp garlic powder

  • 1 tsp lemon juice

  • Salt & pepper to taste

Veggies (choose a rainbow mix)

  • Red: bell peppers, shredded red cabbage, cherry tomatoes (halved)

  • Orange: shredded carrots, orange bell pepper

  • Yellow: corn kernels, yellow bell pepper strips

  • Green: spinach, cucumber matchsticks, microgreens, fresh herbs

  • Purple: purple cabbage, purple carrots

  • White: thinly sliced radishes

For the Board

  • Extra veggies for dipping

  • Small bowls of ranch, hummus, yogurt dip, or pesto

  • Fresh herbs (parsley, dill, basil) for decoration

Instructions

1. Make the Creamy Spread

  1. In a mixing bowl, combine:

    • cream cheese

    • Greek yogurt (optional)

    • garlic powder

    • lemon juice

    • salt and pepper

  2. Mix well until smooth and spreadable.

2. Prepare the Veggies

  • Slice all vegetables into thin strips or shreds so they roll easily.

  • Pat dry to prevent soggy pinwheels.

3. Assemble the Pinwheels

  1. Lay one tortilla flat on a cutting board.

  2. Spread a thin, even layer of the cream-cheese mixture (or hummus).

  3. Arrange the vegetables in lines across the tortilla, forming your color gradient (red → orange → yellow → green → purple).

  4. Roll tightly from one side to the other.

  5. Wrap the roll in plastic wrap and refrigerate 20–30 minutes to help it firm up.

  6. Slice into 1-inch pinwheels using a sharp knife.

Repeat with all tortillas.

4. Build the Rainbow Board

  1. Arrange pinwheels on a wooden board or platter in a rainbow swirl, straight line, or circular pattern.

  2. Fill gaps with extra veggies, dips, olives, nuts, or crackers.

  3. Garnish with fresh herbs and lemon slices for brightness.

Tips for Perfect Pinwheels

  • Don’t overfill—thin veggie layers roll better.

  • Use flexible tortillas; avoid ones that crack.

  • Dry the vegetables thoroughly.

  • A very sharp knife makes clean cuts.
