Belgian Waffles with Cream & Berry Coulis
Ingredients
For the Belgian Waffles

2 cups all-purpose flour
-
2 tbsp sugar
-
1 tbsp baking powder
-
1/2 tsp salt
-
2 large eggs (separated)
-
1 3/4 cups milk
-
1/3 cup melted butter (or neutral oil)
-
1 tsp vanilla extract
For the Berry Coulis (Berry Sauce)
-
1 cup raspberries (fresh or frozen)
-
1/2 cup strawberries, chopped
-
2–3 tbsp sugar (adjust to taste)
-
1 tsp lemon juice
For the Cream Topping
-
1 cup heavy whipping cream
-
2 tbsp powdered sugar
-
1 tsp vanilla extract
For Garnish
-
Fresh raspberries
-
Fresh strawberries
-
Mint leaves
-
Optional: melted white chocolate or vanilla cream sauce
Instructions

1. Make the Belgian Waffle Batter

In a bowl, whisk together flour, sugar, baking powder, salt.

In a separate bowl, mix egg yolks, milk, melted butter, vanilla.

Combine wet + dry ingredients, mix gently (do not overmix).
-
In another bowl, beat egg whites until stiff peaks form, then fold gently into the batter.

This step makes the waffles extra fluffy.

Preheat your waffle iron and lightly oil it.
2. Cook the Waffles
-
Pour batter into the waffle iron and cook until golden brown.

Transfer waffles to a rack to keep the outside crisp.
3. Make the Berry Coulis
-
Add raspberries, strawberries, sugar, and lemon juice to a small saucepan.
-
Cook over medium heat for 5–7 minutes, stirring occasionally.
-
For a smooth sauce, blend the mixture and strain out seeds.

Let cool slightly before drizzling.
4. Whip the Cream
-
Using a cold mixing bowl, whip heavy cream + powdered sugar + vanilla.

Whip until soft to medium peaks form.
-
Keep chilled until serving.
5. Assemble the Plate

Place warm waffles on a plate.
-
Drizzle berry coulis generously over the waffles.

Add a dollop or swirl of whipped cream on top.
-
Decorate with fresh raspberries, strawberries, mint leaves.

Optional: drizzle white chocolate sauce for extra richness.
Notes

Waffles are best served fresh—crisp outside, soft fluffy inside.

You can substitute berries with blueberries or a mixed berry blend.

For extra luxury, add a scoop of vanilla ice cream.
