Cucumber Shrimp Bites with Avocado

Ingredients:

For the Shrimp:

  • 12 large shrimp, peeled and deveined

  • 1 tbsp olive oil

  • 1 tsp smoked paprika

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • Salt and pepper to taste

  • 1 tbsp fresh lime juice

For the Avocado Topping:

  • 2 ripe avocados, peeled and mashed

  • 1 tbsp fresh lime juice

  • 1/4 cup fresh cilantro, chopped

  • Salt and pepper to taste

For the Cucumber:

  • 1 large cucumber, sliced into 1/2 inch thick rounds

  • Fresh cilantro leaves for garnish (optional)

Instructions:

1. Prepare the Shrimp:

  • In a small bowl, combine the olive oil, smoked paprika, garlic powder, onion powder, salt, and pepper.

  • Toss the shrimp in the seasoning mixture, ensuring they're evenly coated.

  • Heat a skillet or grill pan over medium heat. Cook the shrimp for about 2-3 minutes on each side until they're pink, cooked through, and have a nice sear.

  • Remove from heat, drizzle with fresh lime juice, and set aside to cool slightly.

2. Prepare the Avocado Topping:

  • In a medium bowl, mash the ripe avocados until smooth, leaving some texture.

  • Stir in the fresh lime juice, chopped cilantro, salt, and pepper.

  • Adjust the seasoning if needed.

3. Assemble the Bites:

  • Arrange the cucumber slices on a serving platter.

  • Spoon a small amount of the mashed avocado onto each cucumber slice, spreading it evenly.

  • Top each avocado-covered cucumber with a cooked shrimp.

4. Garnish and Serve:

  • Garnish with additional chopped cilantro or a sprinkle of chili flakes for a bit of heat (optional).

  • Serve immediately and enjoy!

Notes:

  • You can grill the shrimp instead of pan-frying if you prefer a smoky flavor.

  • These shrimp bites are perfect for a light appetizer or party snack.

  • If you want a spicier version, you can add a bit of chopped jalapeño or a dash of hot sauce to the avocado mixture.
