Creamy Shrimp-Stuffed Salmon


Creamy Shrimp-Stuffed Salmon (Baked Salmon with Shrimp Filling)

Ingredients

For the Salmon

  • 1 large salmon fillet (about 1–1.5 kg), skin on

  • 1–2 tbsp olive oil

  • Salt and black pepper, to taste

  • 1 tsp garlic powder

  • 1 tsp paprika

  • 1 lemon (sliced for serving)

For the Shrimp Filling

  • 250–300 g shrimp, peeled and deveined (small or medium shrimp)

  • 1 tbsp butter

  • 3 cloves garlic, minced

  • 1 tbsp lemon juice

  • 120 g cream cheese (softened)

  • 3 tbsp mayonnaise

  • 1/3 cup Parmesan cheese, grated

  • 2 tbsp chopped parsley

  • Salt & pepper to taste

For the Topping

  • Extra grilled shrimp (optional)

  • Fresh parsley or dill

  • 1–2 tbsp melted butter (for brushing)


Instructions

1. Prepare the Salmon

  1. Preheat the oven to 375°F (190°C).

  2. Place the salmon fillet on a baking tray lined with parchment paper.

  3. Using a sharp knife, cut a deep slit lengthwise down the center of the salmon to create a pocket for stuffing (do not cut through the bottom).

  4. Brush the salmon with olive oil and season with salt, pepper, garlic powder, and paprika.


2. Cook the Shrimp for the Filling

  1. Chop the shrimp into small pieces.

  2. In a pan, melt butter over medium heat.

  3. Add garlic and sauté until fragrant (about 30 seconds).

  4. Add chopped shrimp and cook 2–3 minutes until pink.

  5. Add lemon juice and remove from heat.


3. Make the Creamy Filling

In a bowl, combine:

  • cream cheese

  • mayonnaise

  • Parmesan

  • chopped parsley

  • cooked shrimp mixture

  • salt & pepper

Mix until creamy and well combined.


4. Stuff the Salmon

  1. Fill the slit in the salmon generously with the creamy shrimp filling.

  2. Spoon any remaining filling over the top if you like.

  3. Brush the top lightly with melted butter for better browning.


5. Bake the Salmon

  1. Bake for 20–25 minutes, depending on thickness.

  2. For a golden top, broil for an additional 2–3 minutes at the end.

  3. If using extra shrimp as topping, grill or pan-sear them separately and place on top before serving.


6. Garnish & Serve

Serve the stuffed salmon with:

  • lemon slices

  • fresh parsley or dill

  • extra melted butter or garlic butter drizzled on top

Pairs beautifully with mashed potatoes, steamed veggies, rice pilaf, or a fresh salad.
