Roasted Pears with Blue Cheese & Caramelized Walnuts

Ingredients

For the Roasted Pears

  • 3 ripe but firm pears (Bosc or Anjou work best)

  • 2 tbsp melted butter

  • 1–2 tbsp honey or maple syrup

  • Pinch of salt

For the Filling

  • 120 g blue cheese (gorgonzola, roquefort, or stilton)

  • 3 tbsp cream cheese (optional for extra creaminess)

  • 1 tbsp honey (optional)

For the Caramelized Walnuts

  • 1/2 cup walnut pieces

  • 2 tbsp butter

  • 2–3 tbsp honey or brown sugar

  • Pinch of salt

For Garnish

  • Fresh rosemary or thyme

  • Extra honey (optional drizzle)

1. Prepare the Pears

  1. Preheat oven to 190°C (375°F).

  2. Slice pears in half lengthwise and scoop out the seeds + a little cavity for filling.

  3. Brush the cut side with melted butter and drizzle with honey.

  4. Place pears cut-side up on a baking tray.

  5. Roast for 20–25 minutes, until soft but still holding shape.


2. Make the Caramelized Walnuts

  1. Heat a pan over medium heat.

  2. Add butter + honey/brown sugar.

  3. Once melted, add walnuts and stir to coat evenly.

  4. Cook 3–4 minutes until glossy and lightly caramelized.

  5. Sprinkle a pinch of salt and set aside.


3. Prepare the Filling

  1. In a small bowl, mash blue cheese + cream cheese until creamy.

  2. Add 1 tbsp honey if you want a sweeter contrast.


4. Assemble the Dish

  1. Remove roasted pears from the oven.

  2. Spoon a generous amount of cheese mixture into each pear cavity.

  3. Top with caramelized walnuts.

  4. Return to the oven for 5 minutes to slightly melt the cheese (optional).


5. Serve

  • Garnish with fresh rosemary or thyme.

  • Drizzle extra honey on top if desired.

  • Serve warm as an appetizer, dessert, or brunch dish.


Notes

  • You can switch blue cheese for goat cheese if you prefer a milder taste.

  • Add a splash of balsamic glaze for extra depth.

  • Perfect pairing with wine: Sauvignon Blanc, Riesling, or Chardonnay.
