  • 2 large flour tortillas

  • 4 large eggs

  • 1 ripe avocado, sliced

Instructions

1. Cook the Eggs

Crack eggs into a bowl, add milk, salt, and pepper, and whisk well.
Heat olive oil or butter in a pan over medium-low heat.
Pour in the eggs and scramble gently until soft and just set. Remove from heat.

2. Warm the Tortillas

Warm tortillas in a dry pan for 20–30 seconds per side until soft and flexible.

3. Assemble the Wrap

Place scrambled eggs evenly in the center of each tortilla.
Top with sliced avocado and sprinkle with fresh herbs if using.

4. Roll

Fold in the sides, then roll tightly from the bottom to form a wrap.

5. Serve

Cut in half and serve immediately while warm.
