Tuna Tartare with Avocado Mousse in Waffle Cones

This elegant appetizer combines creamy avocado mousse, fresh tuna tartare, and crispy waffle cones. It’s light, fresh, and visually striking—perfect for parties or special occasions.


Ingredients

Tuna Tartare

  • 200 g sushi-grade fresh tuna

  • 1 teaspoon soy sauce

  • 1 teaspoon sesame oil

  • 1 teaspoon lime or lemon juice

  • ½ teaspoon honey or sugar

  • ½ teaspoon freshly ground black pepper

  • 1 teaspoon finely chopped shallot (optional)


Avocado Mousse

  • 2 ripe avocados

  • 1 tablespoon lime or lemon juice

  • 2 tablespoons heavy cream or Greek yogurt

  • 1 tablespoon olive oil

  • Salt to taste


For Assembly & Garnish

  • 6–8 small waffle cones

  • Black and white sesame seeds

  • Microgreens or edible flowers

  • Small diced cucumber or avocado (optional)


Instructions

Step 1: Prepare the Tuna Tartare

  1. Pat the tuna dry with paper towels.

  2. Dice into small, even cubes using a sharp knife.

  3. Place tuna in a bowl.

  4. Add soy sauce, sesame oil, citrus juice, honey, black pepper, and shallot.

  5. Gently mix and refrigerate for 10–15 minutes.


Step 2: Make the Avocado Mousse

  1. Scoop avocado flesh into a blender or food processor.

  2. Add lime juice, cream (or yogurt), olive oil, and salt.

  3. Blend until smooth and creamy.

  4. Transfer to a piping bag or spoon into a bowl.

  5. Chill for 10 minutes to firm slightly.


Step 3: Assemble the Cones

  1. Pipe or spoon avocado mousse into the bottom of each waffle cone.

  2. Top with a generous spoon of tuna tartare.

  3. Sprinkle sesame seeds on top.

  4. Garnish with microgreens, edible flowers, and optional diced cucumber.


Serving

  • Serve immediately for best texture.

  • Ideal as:

    • Cocktail appetizer

    • Party finger food

    • Fine-dining starter


Tips

  • Keep cones dry until serving to prevent sogginess.

  • For extra flavor, add a drop of chili oil or yuzu kosho.

  • Tuna must be sushi-grade and very fresh.
