Strawberry Mille Crêpe Cake

This elegant cake is made of dozens of thin crêpes layered with light strawberry cream and fresh strawberries. Soft, creamy, and not overly sweet.


Ingredients

Crêpe Batter

  • 250 ml (1 cup) whole milk

  • 120 ml (½ cup) water

  • 3 large eggs

  • 40 g (3 tbsp) sugar

  • 120 g (1 cup) all-purpose flour

  • 30 g (2 tbsp) unsalted butter, melted

  • 1 teaspoon vanilla extract

  • Pinch of salt


Strawberry Cream Filling

  • 400 ml (1⅔ cups) heavy whipping cream, cold

  • 60 g (¼ cup) powdered sugar

  • 1 teaspoon vanilla extract

  • 120 g fresh strawberries, finely chopped


Topping & Decoration

  • Fresh strawberries

  • Powdered sugar (optional)

  • Mint leaves or blueberries (optional)

Step 1: Make the Crêpe Batter

  1. In a bowl, whisk eggs and sugar until combined.

  2. Add milk, water, melted butter, vanilla, and salt.

  3. Gradually whisk in flour until smooth and lump-free.

  4. Strain batter if needed.

  5. Cover and rest in the refrigerator for 30–60 minutes.


Step 2: Cook the Crêpes

  1. Heat a non-stick pan over medium-low heat and lightly grease.

  2. Pour about ¼ cup batter into the pan, swirling to coat thinly.

  3. Cook 30–40 seconds until set, flip, cook another 10–15 seconds.

  4. Transfer to a plate and cool completely.

  5. Repeat until batter is finished (about 18–22 crêpes).


Step 3: Prepare Strawberry Cream

  1. Whip cold cream with powdered sugar and vanilla until soft peaks form.

  2. Gently fold in chopped strawberries.

  3. Chill cream for 10–15 minutes before assembling.


Step 4: Assemble the Cake

  1. Place one crêpe on a flat plate.

  2. Spread a thin layer of strawberry cream evenly.

  3. Place another crêpe on top.

  4. Repeat layering until all crêpes are used.

  5. Finish with cream on top and lightly frost the sides.


Step 5: Chill and Decorate

  1. Refrigerate the cake for 3–4 hours (or overnight) to set.

  2. Decorate with fresh strawberries and optional powdered sugar.


Serving

  • Slice with a sharp knife wiped clean between cuts.

  • Serve cold.


Tips

  • Keep cream layers thin for clean slices.

  • Use very ripe strawberries for best flavor.

  • Resting time is essential for perfect texture.
