
Shepherd's Pie Soup

A cozy, hearty twist on the classic shepherd’s pie - this soup delivers all the familiar flavors of savory meat, vegetables, and creamy potatoes in a warm, comforting bowl.
Ingredients

1 lb ground lamb or beef

1 medium onion, diced

2 cloves garlic, minced

2 carrots, diced

2 celery stalks, diced

4 cups beef or vegetable broth

2 cups frozen peas

2 tablespoons tomato paste

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme
-
1 teaspoon dried rosemary

Salt and pepper, to taste

4 large potatoes, peeled and cubed

1/2 cup milk

2 tablespoons butter
-
Fresh parsley, chopped (for garnish)

Instructions
1. Cook the Potatoes
Place the cubed potatoes in a large pot of salted water. Bring to a boil and cook until tender, about 12–15 minutes.
Drain well, then mash with butter and milk until smooth and creamy. Season with salt and pepper. Set aside.
2. Brown the Meat
In a large soup pot or Dutch oven over medium heat, add the ground lamb or beef. Cook until browned, breaking it up with a spoon. Drain excess fat if needed.
3. Sauté the Vegetables
Add the diced onion, garlic, carrots, and celery to the pot. Cook for 5–7 minutes, stirring occasionally, until the vegetables soften and become fragrant.
4. Build the Soup Base
Stir in the tomato paste, Worcestershire sauce, dried thyme, and dried rosemary. Cook for 1–2 minutes to deepen the flavor.
Pour in the broth and bring the mixture to a gentle simmer.
5. Simmer
Let the soup simmer uncovered for 15–20 minutes, allowing the flavors to meld and the vegetables to become tender.
6. Add Peas
Stir in the frozen peas and cook for an additional 5 minutes. Taste and adjust seasoning with salt and pepper as needed.
7. Serve
Ladle the soup into bowls. Top each serving with a generous spoonful of mashed potatoes.
Garnish with freshly chopped parsley and serve hot.
