Chocolate Lava Cake

Rich, indulgent, and irresistibly gooey, Chocolate Lava Cake features a soft outer layer with a warm, molten chocolate center. It’s a classic dessert that feels elegant but is surprisingly easy to make at home.

Ingredients

  • 1/2 cup (115 g) unsalted butter

  • 170 g (6 oz) dark chocolate, chopped

  • 1 cup powdered sugar

  • 2 large eggs

  • 2 large egg yolks

  • 1 teaspoon vanilla extract

  • 1/2 cup all-purpose flour

  • 1/4 teaspoon salt

  • Butter and cocoa powder (for greasing ramekins)

Instructions

1. Preheat the Oven

Preheat your oven to 220°C (425°F).
Generously butter four ramekins and dust them lightly with cocoa powder. Place the ramekins on a baking tray.

2. Melt the Chocolate and Butter

In a heatproof bowl, melt the butter and dark chocolate together using a double boiler or microwave (in 20-second intervals), stirring until smooth. Let the mixture cool slightly.

3. Mix the Batter

Whisk the powdered sugar into the melted chocolate mixture until smooth.

Add the eggs and egg yolks, one at a time, whisking well after each addition. Stir in the vanilla extract.

Gently fold in the flour and salt until just combined. Do not overmix.

4. Fill the Ramekins

Divide the batter evenly among the prepared ramekins, filling each about three-quarters full.

5. Bake

Bake for 12–14 minutes, until the edges are set but the centers remain soft.

6. Serve

Remove from the oven and let the cakes rest for 1 minute. Carefully run a knife around the edges, invert onto plates, and serve immediately.
