Roasted Chicken Leg with Gravy, Mashed Potatoes & Vegetables
This is a hearty, home-style meal featuring juicy roasted chicken leg with rich gravy, creamy mashed potatoes, and caramelized vegetables. Simple, comforting, and perfect for a complete dinner.
Ingredients (1–2 servings)
Chicken

1 large chicken leg (thigh + drumstick)

1 tablespoon olive oil or melted butter
-
½ teaspoon salt

½ teaspoon black pepper
-
½ teaspoon paprika
-
½ teaspoon garlic powder
-
½ teaspoon dried thyme or rosemary
Gravy
-
Pan drippings from roasted chicken
-
1 tablespoon butter
-
1 tablespoon all-purpose flour
-
¾ cup chicken stock
-
Salt and pepper to taste
Mashed Potatoes
-
2 medium potatoes, peeled and cubed
-
2 tablespoons butter
-
¼ cup warm milk or cream
-
Salt to taste
Roasted Vegetables
-
1 cup baby carrots
-
½ cup Brussels sprouts, halved
-
1 tablespoon olive oil
-
Salt and black pepper
Instructions

Step 1: Roast the Chicken

Preheat oven to 200°C (400°F).

Pat chicken dry with paper towels.

Rub chicken with olive oil.

Season evenly with salt, pepper, paprika, garlic powder, and herbs.

Place on a baking tray or roasting pan.

Roast for 40–45 minutes, turning once, until golden brown and internal temperature reaches 75°C (165°F).

Remove chicken and rest for 5 minutes.
Step 2: Roast the Vegetables

Toss carrots and Brussels sprouts with olive oil, salt, and pepper.

Spread on a baking tray.

Roast in the same oven for 25–30 minutes, turning once, until tender and caramelized.
Step 3: Make the Mashed Potatoes

Boil potatoes in salted water for 15–20 minutes until fork-tender.

Drain well.

Mash with butter and warm milk.
-
Season with salt until smooth and creamy.
Step 4: Prepare the Gravy

In a small pan, melt butter over medium heat.

Add flour and whisk for 1 minute.

Gradually pour in chicken stock while whisking.

Add pan drippings from the roasted chicken.

Simmer 3–5 minutes until thick.

Season with salt and pepper.
Step 5: Serve

Plate mashed potatoes.

Add roasted vegetables.

Place chicken leg on top or beside potatoes.

Spoon warm gravy over the chicken.
Tips

For crispier skin, broil the chicken for 2–3 minutes at the end.

Let chicken rest before serving to keep it juicy.

Gravy can be made richer with a splash of cream.
