Zesty Shrimp Ceviche Stuffed Avocados

I. Ingredients

The Shrimp Filling:

  • 1 lb (450g) Large Shrimp: Peeled, deveined, and cooked (blanched or grilled).

  • 2-3 Large Avocados: Halved and pitted.

  • 1/2 cup Red onion: Finely diced.

  • 1 cup Roma tomatoes: Seeded and diced.

  • 1/2 cup Fresh cilantro: Finely chopped.

  • 1-2 Jalapeños: Seeded and minced (optional for heat).

The Citrus Dressing:

  • 1/4 cup Lime juice: Freshly squeezed.

  • 2 tbsp Lemon juice.

  • 2 tbsp Extra virgin olive oil.

  • To taste: Sea salt and freshly cracked black pepper.

  • A pinch: Chili flakes or Tajín seasoning (for a kick).


II. Instructions

1. Prepare the Shrimp

  • If using raw shrimp, poach them in boiling salted water for 2–3 minutes until pink and opaque. Immediately plunge them into an ice bath to stop the cooking.

  • Once cooled, pat the shrimp dry. You can leave them whole (as seen in the photo) or chop them into smaller pieces if you prefer a bite-sized ceviche style.

2. Mix the Ceviche

  • In a large glass bowl, combine the shrimp, diced red onion, tomatoes, cilantro, and jalapeños.

  • Pour in the lime juice, lemon juice, and olive oil.

  • Season with salt, pepper, and chili flakes. Toss gently to ensure everything is well-coated.

  • Pro Tip: Cover and let the mixture marinate in the refrigerator for at least 20–30 minutes. This allows the flavors to meld and the onions to soften.

3. Prepare the Avocados

  • Slice the avocados in half and remove the pits.

  • If the hole from the pit is small, use a spoon to scoop out a little extra flesh to create a larger "bowl" for the filling. (You can dice the scooped-out avocado and add it back into the shrimp mixture!)

  • Lightly brush the exposed avocado flesh with a little lime juice to prevent browning.

4. Assembly

  • Spoon the chilled shrimp ceviche generously into each avocado half, piling it high.

  • Drizzle any remaining juices from the bowl over the top.

5. Garnish & Serve

  • Top with extra cilantro and a sprinkle of black pepper or red pepper flakes.

  • Serve immediately with lime wedges on the side and crispy tortilla chips if desired.
