- Crack 4 eggs into a bowl. Peel the shallots and cut them into thin slices.
- Pick off yellow and wilted leaves from the chives, wash them, and cut them into 2 finger-length pieces.

- Use chopsticks and a spoon to spread the chives over the egg and fry the egg over low heat for 3-5 minutes until the egg surface is firm. Then, turn the egg over and fry for another 2-3 minutes.
