3. Add Olive Oil

After rinsing the rice, add 3–4 drops of olive oil to the pot and cook as usual. You can also stir in the olive oil after the rice is done.

Rice is high in starch, which includes both digestible and resistant starch. Resistant starch isn't easily broken down in the small intestine. Adding a bit of olive oil during cooking helps reduce the absorption of this starch, making the rice better suited for people on a diet.
