Avocado, Sautéed Mushroom & Spinach Toast with Soft-Boiled Eggs

Ingredients

  • 2 large eggs

  • 1 slice artisan bread or whole-grain toast

  • 1/2 ripe avocado, sliced

  • 1 cup fresh mushrooms (button or cremini), sliced

  • 1 cup fresh spinach

  • 1 tbsp olive oil

  • 1/2 tbsp butter (optional, for richer flavor)

  • Salt, to taste

  • Freshly ground black pepper, to taste

  • Optional garnish: fresh parsley or chives

  • Side: fresh tomatoes, sliced


Instructions

1. Soft-boil the eggs

  1. Bring a small pot of water to a boil.

  2. Gently lower the eggs into the boiling water.

  3. Cook for 7 minutes for slightly jammy yolks.

  4. Transfer eggs immediately to ice water for 5 minutes.

  5. Peel carefully and cut in half.


2. Toast the bread

  1. Toast the bread in a toaster or skillet until golden and crispy.

  2. Set aside on a serving plate.


3. Sauté the mushrooms

  1. Heat olive oil and butter in a pan over medium heat.

  2. Add mushrooms and cook for 5–6 minutes, stirring occasionally, until browned.

  3. Season with salt and pepper.

  4. Remove from pan and set aside.


4. Wilt the spinach

  1. In the same pan, add spinach.

  2. Cook for 1–2 minutes until just wilted.

  3. Lightly season with salt.


5. Assemble the toast

  1. Spread the sautéed spinach evenly over the toast.

  2. Layer the mushrooms on top.

  3. Add avocado slices to one side.

  4. Place the halved eggs on top or beside the mushrooms.

  5. Sprinkle with extra pepper and garnish with fresh herbs.


Serving Suggestions

  • Serve with fresh sliced tomatoes and a drizzle of olive oil.

  • Optional: add a squeeze of lemon juice for brightness.

  • Pair with coffee, fresh juice, or green tea.
