Ingredients

2 large eggs

1 slice artisan bread or whole-grain toast

1/2 ripe avocado, sliced

1 cup fresh mushrooms (button or cremini), sliced

1 cup fresh spinach

1 tbsp olive oil
-
1/2 tbsp butter (optional, for richer flavor)

Salt, to taste

Freshly ground black pepper, to taste

Optional garnish: fresh parsley or chives

Side: fresh tomatoes, sliced
Instructions

1. Soft-boil the eggs
-
Bring a small pot of water to a boil.

Gently lower the eggs into the boiling water.
-
Cook for 7 minutes for slightly jammy yolks.

Transfer eggs immediately to ice water for 5 minutes.

Peel carefully and cut in half.
2. Toast the bread
-
Toast the bread in a toaster or skillet until golden and crispy.

Set aside on a serving plate.
3. Sauté the mushrooms
-
Heat olive oil and butter in a pan over medium heat.
-
Add mushrooms and cook for 5–6 minutes, stirring occasionally, until browned.

Season with salt and pepper.

Remove from pan and set aside.
4. Wilt the spinach
-
In the same pan, add spinach.
-
Cook for 1–2 minutes until just wilted.

Lightly season with salt.
5. Assemble the toast
-
Spread the sautéed spinach evenly over the toast.

Layer the mushrooms on top.

Add avocado slices to one side.
-
Place the halved eggs on top or beside the mushrooms.
-
Sprinkle with extra pepper and garnish with fresh herbs.
