Strawberry Ricotta Toast

Ingredients (2–3 servings)

For the Toast

  • 4 slices of thick rustic bread (sourdough or brioche works great)

  • 2–3 tbsp butter or olive oil (for toasting)

Ricotta Layer

  • 1 cup ricotta cheese

  • 1–2 tbsp honey or maple syrup

  • 1/2 tsp vanilla extract (optional)

  • Pinch of salt

  • Zest of half a lemon (optional but amazing)

Strawberry Topping

  • 1.5 cups fresh strawberries, hulled and sliced

  • 1 tbsp honey or sugar

  • 1 tsp lemon juice

  • Freshly ground black pepper (optional but very good)

  • Fresh mint leaves for garnish


Instructions

1. Prepare the Strawberry Topping

  1. Slice strawberries and place in a bowl.

  2. Add honey (or sugar) and lemon juice.

  3. Toss gently and let sit for 5–10 minutes to release juices (maceration).


2. Make the Ricotta Spread

  1. In a small bowl, mix ricotta with honey, vanilla extract, lemon zest, and a pinch of salt.

  2. Whip lightly with a spoon until creamy.


3. Toast the Bread

Option A — Pan Toast:

  1. Heat a pan with butter or a drizzle of olive oil.

  2. Toast bread on both sides until golden and crisp.

Option B — Oven Toast:

  1. Brush bread lightly with olive oil.

  2. Toast at 190°C (375°F) for 8–10 minutes until crisp.


4. Assemble the Toast

  1. Spread a generous layer of ricotta onto each slice.

  2. Pile the strawberries on top.

  3. Drizzle extra honey if you like it sweeter.

  4. Add fresh mint leaves.

  5. Sprinkle black pepper for contrast (optional but delicious).


5. Serve

Serve immediately while the bread is still warm and crispy.


Optional Add-Ons

  • A drizzle of balsamic glaze

  • Chopped pistachios

  • A spoon of chia seeds

  • Swap ricotta for mascarpone or Greek yogurt
