Garlic Butter Beef and Spinach Tortellini



Ingredients:

  • 1 lb (450 g) ground beef

  • 2 tablespoons olive oil

  • 3 cloves garlic, minced

  • 2 cups fresh spinach, chopped

  • 1 package (9 oz) cheese tortellini (refrigerated or frozen)

  • 1/2 cup heavy cream

  • 1/4 cup grated Parmesan cheese

  • 1/2 teaspoon dried Italian seasoning

  • Salt and freshly ground black pepper, to taste

  • 2 tablespoons unsalted butter

  • Fresh parsley, chopped (for garnish)

Instructions

1. Cook the tortellini
Bring a large pot of salted water to a boil. Add the cheese tortellini and cook according to package instructions until al dente. Drain and set aside.

2. Brown the beef
In a large skillet, heat the olive oil over medium-high heat. Add the ground beef and cook, breaking it apart with a spoon, until browned and fully cooked. Season lightly with salt and pepper.

3. Add garlic and spinach
Reduce heat to medium. Add the minced garlic to the beef and sauté for 1 minute until fragrant. Stir in the chopped spinach and cook until wilted.

4. Add cream and Parmesan
Pour in the heavy cream and stir to combine. Add the grated Parmesan cheese and Italian seasoning. Let the sauce simmer for 2–3 minutes until slightly thickened.

5. Add the butter
Stir in the unsalted butter until melted, giving the sauce a rich, glossy finish.

6. Combine with tortellini
Add the cooked tortellini to the skillet and gently toss to coat everything evenly in the creamy garlic butter sauce. Adjust seasoning with salt and pepper as needed.

7. Serve
Garnish with fresh chopped parsley and extra Parmesan if desired. Serve warm.
