Beef Stir-Fry with Bell Peppers and Onions 

Ingredients (Serves 2–3)

For the beef

  • 400 g (14 oz) beef sirloin or flank steak

  • 1 tbsp soy sauce

  • 1 tbsp oyster sauce

  • 1 tsp cornstarch

  • 1 tsp vegetable oil

  • ½ tsp black pepper

Vegetables

  • 1 yellow bell pepper, sliced

  • 1 red bell pepper, sliced

  • 1 green bell pepper, sliced

  • 1 small onion, cut into wedges

  • 2 cloves garlic, minced

  • 1 tsp fresh ginger, minced (optional but recommended)

Stir-fry sauce

  • 2 tbsp soy sauce

  • 1 tbsp oyster sauce

  • 1 tsp dark soy sauce (for color, optional)

  • 1 tsp sugar

  • 2–3 tbsp water or beef stock

  • ½ tsp cornstarch

For cooking

  • 2 tbsp vegetable oil

  • Optional garnish: chopped scallions or fresh herbs

1. Prepare the beef
Slice the beef thinly against the grain into bite-size pieces. In a bowl, mix soy sauce, oyster sauce, cornstarch, vegetable oil, and black pepper. Add the beef and toss until evenly coated. Let it marinate for 15–20 minutes.

2. Make the sauce
In a small bowl, combine soy sauce, oyster sauce, dark soy sauce, sugar, water (or stock), and cornstarch. Stir well until smooth. Set aside.

3. Stir-fry the beef
Heat 1 tablespoon of oil in a wok or large skillet over high heat. Add the beef in a single layer and sear for 1–2 minutes without stirring. Flip and cook another 30–60 seconds until just browned. Remove beef from the pan and set aside.

4. Cook the vegetables
Add the remaining oil to the pan. Add garlic and ginger, stir quickly until fragrant (about 10 seconds). Add onions and bell peppers. Stir-fry over high heat for 2–3 minutes until slightly softened but still crisp.

5. Combine and sauce
Return the beef to the pan. Pour in the prepared sauce and toss everything together. Cook for another 1–2 minutes until the sauce thickens and coats the beef and vegetables evenly.

6. Finish and serve
Taste and adjust seasoning if needed. Remove from heat and garnish with scallions or herbs if desired. Serve hot with steamed rice or noodles.


Tips

  • Keep the heat high to get a good sear and avoid soggy vegetables.

  • Do not overcook the beef; it should stay tender and juicy.

  • You can add broccoli, snow peas, or mushrooms for more texture.
