Savory Mushroom & Grain Puff Pastry Tart

Crispy puff pastry shell filled with herbed grains and sautéed mushrooms

Ingredients

For the Puff Pastry Shell

  • 1 sheet puff pastry (thawed)

  • 1 egg (for egg wash)

  • 1 tbsp milk or cream

For the Mushroom & Grain Filling

  • 1 cup cooked grains (barley, farro, or brown rice)

  • 200 g mushrooms (button, cremini, or mixed), sliced

  • 1 small shallot, finely chopped

  • 2 cloves garlic, minced

  • 2 tbsp olive oil

  • 1 tbsp butter

  • 1 tsp fresh thyme (or ½ tsp dried)

  • Salt and black pepper, to taste

  • 1 tbsp soy sauce or Worcestershire sauce

  • 2 tbsp grated Parmesan (optional)

For Garnish & Sauce (Optional)

  • Fresh microgreens or thyme sprigs

  • Olive oil drizzle

  • Tomato or red pepper sauce (served on the side)


Instructions

1. Prepare the Puff Pastry Shell

  1. Preheat oven to 200°C / 400°F.

  2. Roll the puff pastry slightly and cut into a circle or square.

  3. Score a border about 2 cm (¾ inch) from the edge (do not cut through).

  4. Prick the center with a fork to prevent over-puffing.

  5. Mix egg with milk and brush the border.

  6. Bake for 15–18 minutes until golden and puffed.

  7. Gently press down the center to create a cavity.


2. Make the Mushroom & Grain Filling

  1. Heat olive oil and butter in a pan over medium heat.

  2. Sauté shallot until soft and translucent.

  3. Add garlic and cook for 30 seconds.

  4. Add mushrooms and cook until browned and moisture evaporates.

  5. Season with salt, pepper, thyme, and soy/Worcestershire sauce.

  6. Stir in cooked grains and Parmesan (if using).

  7. Cook 2–3 minutes until well combined and fragrant.


3. Assemble & Finish

  1. Spoon the hot filling into the pastry cavity.

  2. Return to the oven and bake 8–10 minutes until crisp.

  3. Drizzle lightly with olive oil.

  4. Garnish with microgreens or fresh herbs.


Serving Suggestions

  • Serve warm with tomato or red pepper sauce on the side.

  • Pair with a light salad or a glass of white wine.

  • Ideal as a vegetarian main, elegant appetizer, or brunch dish.
