Spicy Egg Curry


Spicy Egg Curry Recipe

Ingredients:

6 boiled eggs
3 tbsp oil
1 medium onion, finely chopped
1 tbsp ginger-garlic paste
2 medium tomatoes, finely chopped or pureed
1–2 green chillies, slit
½ tsp turmeric powder
1 tsp red chilli powder (or to taste)
1½ tsp coriander powder
½ tsp cumin powder
½ tsp garam masala
Salt to taste
1½ cups water
Fresh coriander leaves

Method

Heat oil in a pan. Lightly shallow-fry the boiled eggs till golden. Make small slits and keep aside.

In the same oil, add onions and sauté till golden brown.

Add ginger-garlic paste & green chillies. Sauté till raw smell disappears.

Add tomatoes, turmeric, chilli powder, coriander powder, cumin powder & salt. Cook till oil separates.

Add water and bring to a boil.

Add fried eggs, cover and simmer for 8–10 minutes so eggs absorb the masala.

Sprinkle garam masala, mix gently and cook 2 minutes.

Garnish with coriander leaves.


Tips for Extra Spice 🔥

Add ½ tsp black pepper powder or crushed red chillies.

For dhaba-style heat, add ½ tsp chilli oil or ghee at the end.

For thicker gravy, mash a little masala before adding eggs.
