This colorful one-pan dish features juicy baked sausage, tender shrimp, and a mix of roasted vegetables including baby potatoes, broccoli, cherry tomatoes, and corn. Everything is seasoned simply with olive oil, garlic, herbs, and black pepper, then baked until golden, glossy, and full of flavor. It’s an easy, nutritious, and satisfying meal with minimal cleanup.
Ingredients (Serves 2–3)
Main Ingredients

2 sausages (pork or chicken), scored

250 g shrimp, peeled and deveined

300 g baby potatoes, halved

1 cup broccoli florets

1 cup cherry tomatoes

1/2 cup corn chunks or baby corn

3 cloves garlic, whole or lightly crushed

2–3 tablespoons olive oil
Seasoning
-
1 teaspoon salt (adjust to taste)

1/2 teaspoon black pepper
-
1/2 teaspoon paprika
-
1/2 teaspoon dried oregano or Italian seasoning
-
Fresh rosemary or thyme (optional)
Instructions

Step 1: Prepare the Vegetables

Preheat oven to 200°C (400°F).

In a large bowl, combine baby potatoes, broccoli, corn, cherry tomatoes, and garlic.

Drizzle with olive oil and season with salt, pepper, paprika, and oregano.

Toss well to coat evenly.
Step 2: Start Roasting

Line a baking tray with parchment paper.

Spread the vegetables evenly on the tray.
-
Bake for 20 minutes until they start to soften.
Step 3: Add Sausage & Shrimp

Remove tray from oven.

Add sausages and shrimp on top of the vegetables.

Lightly season shrimp with salt and pepper.

Add rosemary or thyme if using.
Step 4: Finish Baking

Return tray to the oven.

Bake for another 12–15 minutes, until:

Shrimp turn pink and opaque

Sausages are browned and cooked through

Vegetables are golden and tender

Step 5: Serve

Remove from oven and rest for 2–3 minutes.

Serve hot directly from the tray or transfer to a serving dish.
