This indulgent dessert–breakfast hybrid features thick slices of brioche French toast layered with light vanilla cream and fresh berries, then finished with powdered sugar and warm honey drizzle. The outside is golden and caramelized, while the inside stays soft, rich, and custardy.
Ingredients (Serves 2–3)
For the French Toast

6 thick slices brioche bread

3 large eggs

180 ml whole milk

60 ml heavy cream

1 tablespoon granulated sugar

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

A pinch of salt

30 g unsalted butter (for frying)
For the Cream Filling

200 ml cold heavy whipping cream

2 tablespoons powdered sugar
-
1/2 teaspoon vanilla extract
For the Topping
-
Fresh raspberries
-
Fresh blueberries
-
Fresh blackberries
-
Powdered sugar, for dusting

Honey or maple syrup, warmed

Fresh mint leaves (optional)
Instructions

Step 1: Make the Cream Filling

In a cold bowl, whip heavy cream with powdered sugar and vanilla extract.

Beat until soft to medium peaks form.

Refrigerate until ready to assemble.
Step 2: Prepare the Custard

In a shallow bowl, whisk eggs, milk, cream, sugar, vanilla, cinnamon, and salt until well combined.
Step 3: Cook the French Toast

Heat a skillet over medium heat and add butter.

Dip each brioche slice into the custard, coating both sides (do not soak too long).

Cook for 2–3 minutes per side until golden brown and slightly crisp.

Remove and keep warm.
Step 4: Assemble the Stack

Place one slice of French toast on a serving plate.

Spread a generous layer of whipped cream on top.

Add a few fresh berries.

Repeat layering, finishing with French toast on top.
Step 5: Finish & Serve

Dust the top with powdered sugar.

Garnish with mixed berries and mint leaves.

Drizzle warm honey or maple syrup over the stack just before serving.
