Ingredients (Serves 2)

Main Ingredients

  • 2 salmon fillets (150–180 g each, skin on or off)

  • 1 cup fresh pineapple, cut into bite-sized chunks

  • 1 tablespoon cooking oil (vegetable or olive oil)

Teriyaki Sauce

  • 3 tablespoons soy sauce

  • 2 tablespoons honey or brown sugar

  • 1 tablespoon mirin or rice vinegar

  • 1 tablespoon water

  • 1 teaspoon grated fresh ginger

  • 1 clove garlic, minced

  • 1 teaspoon cornstarch + 1 tablespoon water (slurry)

Garnish

  • 1 teaspoon black or white sesame seeds

  • 1–2 green onions, finely chopped

Step 1: Prepare the Teriyaki Sauce

  1. In a small bowl, mix soy sauce, honey (or brown sugar), mirin, water, ginger, and garlic.

  2. Set aside the cornstarch slurry separately.


Step 2: Sear the Salmon

  1. Pat salmon fillets dry with paper towels.

  2. Lightly season with a pinch of salt and pepper.

  3. Heat oil in a non-stick skillet over medium-high heat.

  4. Place salmon in the pan (skin-side down if using skin).

  5. Cook for 3–4 minutes per side until golden brown and nearly cooked through.

  6. Remove salmon from the pan and set aside.


Step 3: Cook the Pineapple

  1. In the same pan, add pineapple chunks.

  2. Sauté for 2–3 minutes until lightly caramelized.

  3. Remove pineapple and set aside.


Step 4: Make the Glaze

  1. Lower heat to medium.

  2. Pour teriyaki sauce into the pan.

  3. Bring to a gentle simmer.

  4. Stir in cornstarch slurry.

  5. Cook for 1–2 minutes until sauce thickens and becomes glossy.


Step 5: Glaze the Salmon

  1. Return salmon to the pan.

  2. Spoon sauce over the fillets repeatedly for 1–2 minutes.

  3. Add pineapple back to the pan and coat lightly with sauce.

  4. Remove from heat once salmon is fully glazed.


Plating & Serving

  • Place salmon on a serving plate.

  • Spoon extra teriyaki glaze over the top.

  • Garnish with pineapple chunks, sesame seeds, and green onions.
