Caramelized Bananas with Vanilla Ice Cream & Pecans
Ingredients

Main Ingredients

  • 2 ripe bananas, peeled and sliced lengthwise

  • 2 scoops vanilla ice cream

For the Caramel Sauce

  • 3 tablespoons unsalted butter

  • 3 tablespoons brown sugar

  • 2 tablespoons heavy cream

  • ½ teaspoon vanilla extract

  • Pinch of salt

Toppings

  • ¼ cup pecans (whole or roughly chopped)

  • Extra caramel sauce for drizzling (optional)


Instructions

Step 1: Prepare the Bananas

  • Slice the bananas lengthwise into halves.

  • Set aside on a plate. Make sure bananas are ripe but still firm so they hold their shape while cooking.


Step 2: Toast the Pecans

  • Heat a dry skillet over medium heat.

  • Add pecans and toast for 2–3 minutes, stirring frequently, until fragrant.

  • Remove from the pan and set aside.


Step 3: Make the Caramel Sauce

  • In the same skillet, melt butter over medium heat.

  • Add brown sugar and stir continuously until dissolved and bubbling.

  • Pour in the heavy cream and stir until smooth.

  • Add vanilla extract and a pinch of salt.

  • Let the sauce simmer gently for 1–2 minutes until slightly thickened.


Step 4: Caramelize the Bananas

  • Carefully place banana slices cut-side down into the caramel sauce.

  • Cook for 1–2 minutes per side until golden and glossy.

  • Spoon sauce over the bananas as they cook.


Step 5: Assemble the Dish

  • Arrange the warm caramelized bananas in a shallow bowl or plate.

  • Place vanilla ice cream on top or alongside the bananas.

  • Sprinkle toasted pecans over the dish.

  • Drizzle extra caramel sauce on top.


Serving Suggestions

  • Serve immediately while bananas are warm and ice cream is cold.

  • Optional additions: cinnamon, rum extract, or dark chocolate shavings.
