Loaded Cheesy Bacon Fries
Ingredients (Serves 2–3)

700 g (1½ lb) russet potatoes, cut into thick fries

2 tbsp olive oil
-
1 tsp paprika
-
½ tsp garlic powder
-
Salt and black pepper, to taste
-
150 g (5 oz) cheddar cheese, shredded
-
6 slices bacon, cooked crispy and crumbled
-
120 ml (½ cup) sour cream
-
2–3 green onions, finely sliced
Optional toppings: jalapeños, ranch dressing, chives, extra cheese
Instructions

1. Prepare the fries
-
Preheat oven to 220°C / 425°F.

Soak potato sticks in cold water for 30 minutes (optional but helps crispiness).

Drain, pat dry thoroughly, then toss with olive oil, paprika, garlic powder, salt, and pepper.
2. Bake the fries
-
Spread fries in a single layer on a lined baking tray.
-
Bake for 35–40 minutes, flipping halfway, until golden and crispy.
3. Add cheese and bacon
-
Remove fries from oven. Sprinkle shredded cheddar evenly over the hot fries.

Add crumbled bacon on top.
-
Return to oven for 5–7 minutes until cheese is fully melted and bubbly.
4. Finish and serve

Spoon sour cream over the fries.

Garnish generously with sliced green onions.

Serve immediately while hot.
Tips

For extra crisp fries, bake on a wire rack set over the tray.

Mix cheddar with mozzarella for a stretchier cheese pull.

Add sour cream after baking to keep fries crispy.
