Loaded Cheesy Bacon Fries 

Ingredients (Serves 2–3)

  • 700 g (1½ lb) russet potatoes, cut into thick fries

  • 2 tbsp olive oil

  • 1 tsp paprika

  • ½ tsp garlic powder

  • Salt and black pepper, to taste

  • 150 g (5 oz) cheddar cheese, shredded

  • 6 slices bacon, cooked crispy and crumbled

  • 120 ml (½ cup) sour cream

  • 2–3 green onions, finely sliced

Optional toppings: jalapeños, ranch dressing, chives, extra cheese

1. Prepare the fries

  • Preheat oven to 220°C / 425°F.

  • Soak potato sticks in cold water for 30 minutes (optional but helps crispiness).

  • Drain, pat dry thoroughly, then toss with olive oil, paprika, garlic powder, salt, and pepper.

2. Bake the fries

  • Spread fries in a single layer on a lined baking tray.

  • Bake for 35–40 minutes, flipping halfway, until golden and crispy.

3. Add cheese and bacon

  • Remove fries from oven. Sprinkle shredded cheddar evenly over the hot fries.

  • Add crumbled bacon on top.

  • Return to oven for 5–7 minutes until cheese is fully melted and bubbly.

4. Finish and serve

  • Spoon sour cream over the fries.

  • Garnish generously with sliced green onions.

  • Serve immediately while hot.


Tips

  • For extra crisp fries, bake on a wire rack set over the tray.

  • Mix cheddar with mozzarella for a stretchier cheese pull.

  • Add sour cream after baking to keep fries crispy.

Result: Crispy fries topped with melted cheese, smoky bacon, cool sour cream, and fresh green onions—rich, indulgent, and perfect as a sharing appetizer or comfort-food meal.
