White Chocolate Raspberry Truffles

  • Pink sprinkles or crushed freeze-dried raspberries

  • Fresh raspberries (optional, for serving)

  • Mint leaves (optional)

1. Make the Filling

  1. In a bowl, beat the cream cheese and butter until smooth and creamy.

  2. Add powdered sugar and vanilla extract, mix well.

  3. Stir in raspberry puree until evenly combined.

  4. Add crushed biscuits gradually and mix until a soft but moldable dough forms.

  5. Cover and refrigerate for 30–40 minutes until firm enough to shape.


2. Shape the Truffles

  1. Scoop small portions (about 1 tablespoon each).

  2. Roll into smooth balls using lightly greased hands.

  3. Place on a tray lined with parchment paper.

  4. Freeze for 15–20 minutes to firm up before coating.


3. Melt the White Chocolate

  1. Melt white chocolate gently over a double boiler or in the microwave (in short intervals).

  2. Stir in vegetable oil to make the coating smooth and glossy.


4. Coat the Truffles

  1. Dip each chilled truffle into the melted white chocolate.

  2. Let excess chocolate drip off.

  3. Place back onto parchment paper.

  4. Immediately sprinkle with pink sprinkles or raspberry crumbs before the chocolate sets.


5. Set & Serve

  1. Refrigerate truffles for 20–30 minutes until fully set.

  2. Serve chilled or slightly softened at room temperature.
