Christmas Berry Pavlova Wreath

Ingredients

For the Pavlova Base

  • 4 large egg whites (room temperature)

  • 1 cup (200g) granulated sugar

  • 1 tsp white vinegar or lemon juice

  • 2 tsp cornstarch

  • 1 tsp vanilla extract

For the Whipped Cream

  • 1 cup heavy cream (cold)

  • 2 tbsp powdered sugar

  • 1 tsp vanilla extract

For the Topping

  • Fresh berries such as:

    • Raspberries

    • Blueberries

    • Strawberries (halved)

    • Red currants

  • Fresh mint leaves

  • Powdered sugar for dusting


Instructions

1. Preheat & Prep

  1. Preheat oven to 120°C (250°F).

  2. Line a baking tray with parchment paper.

  3. Draw a circle (around 20–22 cm) as a guide, then draw a smaller circle inside to form a wreath shape.


2. Make the Meringue

  1. Beat egg whites with an electric mixer on medium speed until soft peaks form.

  2. Gradually add sugar, one tablespoon at a time, beating for 20–30 seconds before adding more.

  3. Increase mixer speed to high and beat until glossy, stiff peaks form (about 5 minutes).

  4. Gently fold in cornstarch, vinegar/lemon juice, and vanilla using a spatula.


3. Shape the Wreath

  1. Spoon the meringue onto the parchment paper, shaping it along the drawn circle to create a ring.

  2. Use a spatula to create soft swirls and texture on the surface.


4. Bake

  1. Place in the oven and bake for 1 hour and 15 minutes.

  2. Turn off the oven and let the pavlova cool completely inside without opening the door — this prevents cracking.


5. Prepare Whipped Cream

  1. Whip cold heavy cream with vanilla and powdered sugar until soft-to-medium peaks.

  2. Chill until ready to use.


6. Assemble the Pavlova Wreath

  1. Spread or pipe whipped cream over the cooled pavlova.

  2. Arrange mixed berries generously on top.

  3. Add mint leaves for color.

  4. Dust lightly with powdered sugar to finish.
