Christmas Berry Pavlova Wreath
Suggested Meal Time: Holiday dessert, celebrations, or any special occasion.
Ingredients
For the Pavlova Base
-
4 large egg whites (room temperature)
-
1 cup (200g) granulated sugar
-
1 tsp white vinegar or lemon juice
-
2 tsp cornstarch
-
1 tsp vanilla extract
For the Whipped Cream
-
1 cup heavy cream (cold)
-
2 tbsp powdered sugar
-
1 tsp vanilla extract
For the Topping
-
Fresh berries such as:
-
Raspberries
-
Blueberries
-
Strawberries (halved)
-
Red currants
-
-
Fresh mint leaves
-
Powdered sugar for dusting
Instructions

1. Preheat & Prep
-
Preheat oven to 120°C (250°F).
-
Line a baking tray with parchment paper.
-
Draw a circle (around 20–22 cm) as a guide, then draw a smaller circle inside to form a wreath shape.
2. Make the Meringue
-
Beat egg whites with an electric mixer on medium speed until soft peaks form.
-
Gradually add sugar, one tablespoon at a time, beating for 20–30 seconds before adding more.
-
Increase mixer speed to high and beat until glossy, stiff peaks form (about 5 minutes).
-
Gently fold in cornstarch, vinegar/lemon juice, and vanilla using a spatula.
3. Shape the Wreath
-
Spoon the meringue onto the parchment paper, shaping it along the drawn circle to create a ring.
-
Use a spatula to create soft swirls and texture on the surface.
4. Bake
-
Place in the oven and bake for 1 hour and 15 minutes.
-
Turn off the oven and let the pavlova cool completely inside without opening the door — this prevents cracking.
5. Prepare Whipped Cream
-
Whip cold heavy cream with vanilla and powdered sugar until soft-to-medium peaks.
-
Chill until ready to use.
6. Assemble the Pavlova Wreath
-
Spread or pipe whipped cream over the cooled pavlova.
-
Arrange mixed berries generously on top.
-
Add mint leaves for color.
-
Dust lightly with powdered sugar to finish.
