Beef Tips with Mushrooms




A rich, savory, melt-in-your-mouth beef dish perfect for serving over mashed potatoes, rice, pasta, or egg noodles.

Ingredients

  • 2 lbs (900 g) beef stew meat or sirloin tips, cubed

  • Salt and black pepper, to taste

  • 2 tbsp olive oil

  • 1 onion, diced

  • 3 cloves garlic, minced

  • 8 oz (225 g) mushrooms, sliced

  • 1 cup beef broth

  • 1/4 cup red wine (optional, enhances flavor)

  • 2 tbsp Worcestershire sauce

  • 1 tbsp soy sauce

  • 1 tsp dried thyme

  • 1 tbsp cornstarch mixed with 2 tbsp water (slurry for thickening)

  • Fresh parsley, chopped (for garnish)

Slow Cooker Instructions

1. Brown the Beef

  • Season beef cubes generously with salt and pepper.

  • Heat olive oil in a skillet over medium-high heat.

  • Sear the beef pieces until browned on all sides (work in batches to avoid overcrowding).

  • Transfer browned beef into the slow cooker.

2. Add Aromatics and Mushrooms

  • In the same skillet, sauté the onion for 2–3 minutes.

  • Add garlic and cook until fragrant (30 seconds).

  • Add mushrooms and sauté for another 2–3 minutes.

  • Transfer everything into the slow cooker.

3. Add Liquids and Seasoning

Pour into the slow cooker:

  • Beef broth

  • Red wine (if using)

  • Worcestershire sauce

  • Soy sauce

  • Dried thyme

Stir gently to combine.

4. Cook

  • Low heat: 6–7 hours

  • High heat: 3–4 hours
    Cook until the beef is very tender.

5. Thicken the Sauce

  • Stir in the cornstarch slurry.

  • Cook on high for 10–15 minutes until the sauce thickens.

6. Serve

  • Sprinkle with fresh parsley.

  • Serve hot over mashed potatoes, rice, or noodles.

Instant Pot Instructions

1. Sauté the Beef

  • Turn Instant Pot to Sauté mode.

  • Add olive oil and sear the seasoned beef until browned.

  • Remove beef and set aside.

2. Sauté Aromatics

  • Add onions and cook until softened.

  • Add garlic and mushrooms, sauté for 2–3 minutes.

3. Deglaze

  • Pour in the red wine (or a splash of broth).

  • Scrape the bottom with a wooden spoon to lift browned bits.

4. Add the Remaining Ingredients

Stir in:

  • Beef broth

  • Worcestershire sauce

  • Soy sauce

  • Thyme

  • Return beef to the pot.

5. Pressure Cook

  • Seal the lid.

  • Set Manual / Pressure Cook for 35 minutes.

  • Allow 10 minutes natural release, then quick release the remaining pressure.

6. Thicken the Sauce

  • Switch to Sauté mode.

  • Add the cornstarch slurry and simmer until the sauce thickens.

7. Serve

  • Garnish with parsley.

  • Serve warm over your favorite side.

Tips for Best Results

  • Browning the beef adds deeper flavor - don’t skip it.

  • For richer taste, use red wine, but broth works perfectly too.

  • Cremini or baby bella mushrooms add the best flavor.

  • Add a splash of heavy cream at the end for a creamier sauce (optional).
