Epic Greek Chicken Souvlaki Bowl with Tzatziki & Fresh Veggies

Ingredients

For the Grilled Chicken

  • 2 chicken breasts or 4 thighs, cut into chunks

  • 2 tbsp olive oil

  • 1 tbsp lemon juice

  • 3 garlic cloves, minced

  • 1 tsp dried oregano

  • 1/2 tsp paprika

  • Salt & black pepper to taste

For the Bowl Base

  • 2 cups cooked basmati or jasmine rice

  • 1 cup sliced cucumbers

  • 1 cup cherry tomatoes, halved

  • 1/2 cup Kalamata olives

  • 1/2 red onion, thinly sliced

  • Fresh dill for topping

For the Tzatziki

  • 1/2 cup Greek yogurt

  • 1/2 cucumber, grated & squeezed dry

  • 1 tbsp lemon juice

  • 1 garlic clove, minced

  • 1 tbsp chopped dill

  • Salt & pepper to taste


Instructions

1. Marinate the Chicken

  1. Combine olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper.

  2. Add chicken pieces and coat evenly.

  3. Marinate for 20 minutes or up to 4 hours.


2. Grill the Chicken

  1. Heat a grill pan or skillet over medium-high heat.

  2. Cook chicken 4–5 minutes per side until charred and fully cooked.

  3. Remove and let rest before serving.

3. Make the Tzatziki

  1. Mix Greek yogurt, grated cucumber, lemon juice, garlic, dill, salt, and pepper.

  2. Chill in the fridge while preparing other components.


4. Assemble the Bowl

  1. Spread rice on the bottom.

  2. Add grilled chicken on top.

  3. Arrange cucumbers, cherry tomatoes, olives, and sliced red onion around the bowl.

  4. Add a generous scoop of tzatziki.

  5. Finish with fresh dill.


Tips

  • Want it low-carb? Swap rice for cauliflower rice.

  • Add feta cheese for extra Mediterranean flavor.

  • Use chicken thighs for juicier texture.
