
Epic Greek Chicken Souvlaki Bowl with Tzatziki & Fresh Veggies
Ingredients
For the Grilled Chicken

2 chicken breasts or 4 thighs, cut into chunks
-
2 tbsp olive oil
-
1 tbsp lemon juice
-
3 garlic cloves, minced
-
1 tsp dried oregano
-
1/2 tsp paprika
-
Salt & black pepper to taste
For the Bowl Base
-
2 cups cooked basmati or jasmine rice
-
1 cup sliced cucumbers
-
1 cup cherry tomatoes, halved
-
1/2 cup Kalamata olives
-
1/2 red onion, thinly sliced
-
Fresh dill for topping
For the Tzatziki
-
1/2 cup Greek yogurt
-
1/2 cucumber, grated & squeezed dry
-
1 tbsp lemon juice
-
1 garlic clove, minced
-
1 tbsp chopped dill
-
Salt & pepper to taste
Instructions
1. Marinate the Chicken
-
Combine olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper.

Add chicken pieces and coat evenly.
-
Marinate for 20 minutes or up to 4 hours.
2. Grill the Chicken
-
Heat a grill pan or skillet over medium-high heat.
-
Cook chicken 4–5 minutes per side until charred and fully cooked.

Remove and let rest before serving.

3. Make the Tzatziki
-
Mix Greek yogurt, grated cucumber, lemon juice, garlic, dill, salt, and pepper.

Chill in the fridge while preparing other components.
4. Assemble the Bowl
-
Spread rice on the bottom.
-
Add grilled chicken on top.
-
Arrange cucumbers, cherry tomatoes, olives, and sliced red onion around the bowl.

Add a generous scoop of tzatziki.
-
Finish with fresh dill.
Tips

Want it low-carb? Swap rice for cauliflower rice.

Add feta cheese for extra Mediterranean flavor.

Use chicken thighs for juicier texture.
