Glazed Chicken with Rice, Crispy Potatoes & Sautéed Mushrooms
Ingredients
For the Chicken
-
400 g chicken breast or thigh, cut into bite-sized pieces
-
1 tablespoon oil
-
Salt and black pepper to taste
Glaze Sauce:
-
3 tablespoons soy sauce
-
2 tablespoons honey or brown sugar
-
1 tablespoon oyster sauce
-
1 tablespoon balsamic vinegar or rice vinegar
-
2 cloves garlic, minced
-
1 teaspoon cornstarch + 2 teaspoons water (slurry)
For the Rice
-
1½ cups jasmine rice
-
2¼ cups water
-
Pinch of salt
-
Chopped herbs (parsley or coriander) for garnish
For the Crispy Potatoes
-
3 medium potatoes, peeled and cubed
-
1 tablespoon oil or butter
-
1 teaspoon paprika
-
Salt and pepper to taste
For the Mushrooms & Tomatoes
-
1 cup sliced mushrooms
-
6–8 cherry tomatoes
-
1 teaspoon butter or oil
-
Salt and pepper to taste
Instructions

1. Cook the Rice
-
Rinse rice until water runs clear.
-
Add rice, water, and salt to a pot or rice cooker.
-
Cook until fluffy.
-
Fluff with a fork and garnish with chopped herbs.
2. Make the Crispy Potatoes
-
Bring a pot of salted water to a boil.
-
Add diced potatoes and boil for 5 minutes (partially cooked).
-
Drain and pat dry.
-
Heat oil or butter in a pan.
-
Add potatoes, season with paprika, salt, and pepper.
-
Pan-fry until golden and crispy on all sides.
-
Set aside.
3. Sauté the Mushrooms & Tomatoes
-
Heat butter in a small pan.
-
Add sliced mushrooms and cook until lightly browned.
-
Season with salt and pepper.
-
Add cherry tomatoes and cook 1–2 minutes until just softened (not mushy).
-
Remove from heat.
4. Cook the Chicken
-
Season chicken pieces with salt and pepper.
-
Heat oil in a pan over medium-high heat.
-
Add chicken and cook until golden and cooked through.
-
In a bowl, whisk together soy sauce, honey, oyster sauce, vinegar, garlic, and cornstarch slurry.
-
Pour sauce into the pan and cook until it thickens and coats the chicken with a glossy glaze.
5. Assemble the Dish
-
Place a portion of rice onto the plate.
-
Add glazed chicken beside it.
-
Add crispy potatoes.
-
Add sautéed mushrooms and cherry tomatoes.
-
Garnish with herbs or pepper if desired.
