Glazed Chicken with Rice, Crispy Potatoes & Sautéed Mushrooms

Glazed Chicken with Rice, Crispy Potatoes & Sautéed Mushrooms 

Ingredients

For the Chicken

  • 400 g chicken breast or thigh, cut into bite-sized pieces

  • 1 tablespoon oil

  • Salt and black pepper to taste

Glaze Sauce:

  • 3 tablespoons soy sauce

  • 2 tablespoons honey or brown sugar

  • 1 tablespoon oyster sauce

  • 1 tablespoon balsamic vinegar or rice vinegar

  • 2 cloves garlic, minced

  • 1 teaspoon cornstarch + 2 teaspoons water (slurry)


For the Rice

  • 1½ cups jasmine rice

  • 2¼ cups water

  • Pinch of salt

  • Chopped herbs (parsley or coriander) for garnish


For the Crispy Potatoes

  • 3 medium potatoes, peeled and cubed

  • 1 tablespoon oil or butter

  • 1 teaspoon paprika

  • Salt and pepper to taste


For the Mushrooms & Tomatoes

  • 1 cup sliced mushrooms

  • 6–8 cherry tomatoes

  • 1 teaspoon butter or oil

  • Salt and pepper to taste

1. Cook the Rice

  1. Rinse rice until water runs clear.

  2. Add rice, water, and salt to a pot or rice cooker.

  3. Cook until fluffy.

  4. Fluff with a fork and garnish with chopped herbs.


2. Make the Crispy Potatoes

  1. Bring a pot of salted water to a boil.

  2. Add diced potatoes and boil for 5 minutes (partially cooked).

  3. Drain and pat dry.

  4. Heat oil or butter in a pan.

  5. Add potatoes, season with paprika, salt, and pepper.

  6. Pan-fry until golden and crispy on all sides.

  7. Set aside.


3. Sauté the Mushrooms & Tomatoes

  1. Heat butter in a small pan.

  2. Add sliced mushrooms and cook until lightly browned.

  3. Season with salt and pepper.

  4. Add cherry tomatoes and cook 1–2 minutes until just softened (not mushy).

  5. Remove from heat.


4. Cook the Chicken

  1. Season chicken pieces with salt and pepper.

  2. Heat oil in a pan over medium-high heat.

  3. Add chicken and cook until golden and cooked through.

  4. In a bowl, whisk together soy sauce, honey, oyster sauce, vinegar, garlic, and cornstarch slurry.

  5. Pour sauce into the pan and cook until it thickens and coats the chicken with a glossy glaze.


5. Assemble the Dish

  1. Place a portion of rice onto the plate.

  2. Add glazed chicken beside it.

  3. Add crispy potatoes.

  4. Add sautéed mushrooms and cherry tomatoes.

  5. Garnish with herbs or pepper if desired.
