Italian Sausage with Peppers & Onions đđ«đ§

Ingredients
-
1 lb Italian sausage (or chicken/turkey sausage)
-
2 tbsp olive oil
-
1 red bell pepper, sliced
-
1 yellow bell pepper, sliced
-
1 green bell pepper, sliced
-
1 large onion, sliced
-
3 garlic cloves, minced
-
1 tsp dried oregano
-
1 tsp dried basil
-
1/4 tsp red pepper flakes (optional)
-
Salt & black pepper to taste
-
1/4 cup chicken broth
-
Fresh parsley, chopped, for garnish
Instructions
1. Cook the Sausage
-
Heat 1 tbsp olive oil in a large skillet over medium heat.

Add sausages whole and cook until browned on all sides (about 8–10 minutes).

Remove from skillet and slice into rounds.
-
Return sliced sausage to the pan and cook until edges are golden.

Transfer to a plate.
2. Sauté the Peppers & Onions

In the same skillet, add remaining 1 tbsp olive oil.
-
Add sliced onions and cook 2–3 minutes until they begin to soften.
-
Add red, yellow, and green peppers.
-
Season with oregano, basil, red pepper flakes, salt, and pepper.
-
Cook 5–6 minutes, stirring occasionally, until veggies are tender but not mushy.

Add garlic and sauté for 1 minute until fragrant.
3. Combine Everything

Add sausage back to the skillet.
-
Pour in chicken broth to deglaze the pan.
-
Toss everything together and simmer for 3–5 minutes until flavors combine.
4. Serve

Garnish with chopped fresh parsley.
-
Serve with rice, pasta, hoagie rolls, mashed potatoes, or eat as a standalone low-carb meal.

Tips

For extra flavor, splash in 1 tbsp balsamic vinegar.

Add mushrooms for more volume and umami.

Make it saucy by adding 1/2 cup marinara.
