Ingredients

  • 1 lb Italian sausage (or chicken/turkey sausage)

  • 2 tbsp olive oil

  • 1 red bell pepper, sliced

  • 1 yellow bell pepper, sliced

  • 1 green bell pepper, sliced

  • 1 large onion, sliced

  • 3 garlic cloves, minced

  • 1 tsp dried oregano

  • 1 tsp dried basil

  • 1/4 tsp red pepper flakes (optional)

  • Salt & black pepper to taste

  • 1/4 cup chicken broth

  • Fresh parsley, chopped, for garnish


Instructions

1. Cook the Sausage

  1. Heat 1 tbsp olive oil in a large skillet over medium heat.

  2. Add sausages whole and cook until browned on all sides (about 8–10 minutes).

  3. Remove from skillet and slice into rounds.

  4. Return sliced sausage to the pan and cook until edges are golden.

  5. Transfer to a plate.


2. Sauté the Peppers & Onions

  1. In the same skillet, add remaining 1 tbsp olive oil.

  2. Add sliced onions and cook 2–3 minutes until they begin to soften.

  3. Add red, yellow, and green peppers.

  4. Season with oregano, basil, red pepper flakes, salt, and pepper.

  5. Cook 5–6 minutes, stirring occasionally, until veggies are tender but not mushy.

  6. Add garlic and sauté for 1 minute until fragrant.


3. Combine Everything

  1. Add sausage back to the skillet.

  2. Pour in chicken broth to deglaze the pan.

  3. Toss everything together and simmer for 3–5 minutes until flavors combine.


4. Serve

  • Garnish with chopped fresh parsley.

  • Serve with rice, pasta, hoagie rolls, mashed potatoes, or eat as a standalone low-carb meal.

Tips

  • For extra flavor, splash in 1 tbsp balsamic vinegar.

  • Add mushrooms for more volume and umami.

  • Make it saucy by adding 1/2 cup marinara.
