
Chicken Fritters with Cheese

Ingredients:

2 cups cooked chicken, shredded (preferably leftover chicken)

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1/4 cup breadcrumbs (optional for extra crunch)

2 large eggs

1/4 cup finely chopped green onions

1/4 cup mayonnaise or Greek yogurt

1 teaspoon garlic powder
-
1 teaspoon onion powder

Salt and pepper to taste

Olive oil or vegetable oil, for frying

Instructions:
1. Prepare the Chicken Mixture:

In a large mixing bowl, combine the shredded chicken, shredded mozzarella cheese, grated Parmesan cheese, breadcrumbs (if using), eggs, green onions, and mayonnaise.

Add garlic powder, onion powder, salt, and pepper. Mix everything together until well combined. The mixture should hold together well. If it feels too loose, add a little more breadcrumbs.
2. Shape the Fritters:

Take a spoonful of the chicken mixture and shape it into small patties or fritters using your hands. You should be able to make about 10-12 fritters, depending on the size.
3. Heat the Oil:

Heat a large skillet over medium heat and add a few tablespoons of oil. The oil should be hot but not smoking.
4. Fry the Fritters:

Place the fritters in the hot skillet, being careful not to overcrowd the pan.

Cook for 3-4 minutes per side or until golden brown and crispy. Flip gently using a spatula to avoid breaking the fritters.

Once cooked, remove the fritters from the skillet and place them on a paper towel-lined plate to drain excess oil.

Serve the chicken fritters hot with a dipping sauce of your choice, such as ranch dressing, hot sauce, or ketchup.

You can also garnish with fresh parsley or more grated Parmesan for added flavor.
