Strawberry Avocado Chicken Lettuce Cups

What You’re Making

Crisp lettuce cups filled with juicy chicken, sweet strawberries, creamy avocado, and a zesty dressing. Light, refreshing, and super aesthetic.


Ingredients (2–3 servings)

For the Filling

  • 1 large chicken breast, cooked and diced

  • 1 cup fresh strawberries, sliced

  • 1 ripe avocado, diced

  • 1–2 tbsp chopped cilantro or parsley

  • Pinch of salt & black pepper

For the Lettuce Cups

  • 8–10 small butter lettuce or baby romaine leaves

For the Dressing

  • 2 tbsp olive oil

  • 1 tbsp honey or maple syrup

  • 1 tbsp lemon juice or lime juice

  • 1 tsp Dijon mustard

  • Salt & pepper to taste


Instructions


Step 1: Cook the Chicken

  1. Season chicken breast lightly with salt and pepper.

  2. Pan-sear on medium heat for 5–6 minutes per side until fully cooked.

  3. Let it rest for a few minutes, then dice into small cubes.
    (You can also use leftover chicken or rotisserie chicken.)


Step 2: Make the Dressing

  1. In a small bowl, whisk together olive oil, honey, lemon juice, mustard, salt, and pepper.

  2. Taste and adjust — you want it slightly sweet, tangy, and bright.


Step 3: Prep the Fresh Ingredients

  1. Slice strawberries.

  2. Dice avocado gently so it stays in shape.

  3. Wash and pat dry lettuce leaves.


Step 4: Assemble the Lettuce Cups

  1. Place lettuce leaves on a large plate.

  2. Add diced chicken into each cup.

  3. Top with strawberries and avocado.

  4. Drizzle the dressing over the top.

  5. Sprinkle with chopped cilantro or parsley.


Step 5: Serve

Serve immediately so the lettuce stays crisp and the avocado stays fresh.


Optional Upgrades

  • Add toasted nuts (almonds, pecans) for crunch.

  • Add chili flakes for a spicy kick.

  • Add feta cheese for richness.

  • Swap chicken for shrimp for a summer vibe.
