Strawberry Avocado Chicken Lettuce Cups
What You’re Making
Crisp lettuce cups filled with juicy chicken, sweet strawberries, creamy avocado, and a zesty dressing. Light, refreshing, and super aesthetic.
Ingredients (2–3 servings)
For the Filling

1 large chicken breast, cooked and diced

1 cup fresh strawberries, sliced
-
1 ripe avocado, diced
-
1–2 tbsp chopped cilantro or parsley
-
Pinch of salt & black pepper
For the Lettuce Cups
-
8–10 small butter lettuce or baby romaine leaves
For the Dressing
-
2 tbsp olive oil
-
1 tbsp honey or maple syrup
-
1 tbsp lemon juice or lime juice
-
1 tsp Dijon mustard
-
Salt & pepper to taste
Instructions

Step 1: Cook the Chicken

Season chicken breast lightly with salt and pepper.

Pan-sear on medium heat for 5–6 minutes per side until fully cooked.

Let it rest for a few minutes, then dice into small cubes.
(You can also use leftover chicken or rotisserie chicken.)
Step 2: Make the Dressing

In a small bowl, whisk together olive oil, honey, lemon juice, mustard, salt, and pepper.

Taste and adjust — you want it slightly sweet, tangy, and bright.
Step 3: Prep the Fresh Ingredients

Slice strawberries.

Dice avocado gently so it stays in shape.

Wash and pat dry lettuce leaves.
Step 4: Assemble the Lettuce Cups

Place lettuce leaves on a large plate.

Add diced chicken into each cup.

Top with strawberries and avocado.

Drizzle the dressing over the top.

Sprinkle with chopped cilantro or parsley.
Step 5: Serve
Serve immediately so the lettuce stays crisp and the avocado stays fresh.
