Rosemary Braised Beef with Sweet Potato Mash & Green Beans
What You’re Making
Tender, fall-apart beef braised in a savory tomato-onion sauce with rosemary, served alongside creamy sweet potato mash and crisp green beans.
Ingredients (2–3 servings)
For the Braised Beef
-
500–600 g beef chuck or brisket, cut into large chunks
-
1 large onion, thinly sliced
-
3 cloves garlic, minced
-
1 carrot, grated or thinly sliced
-
1 tbsp tomato paste
-
1 cup beef broth (or water)
-
1/2 cup crushed tomatoes (optional for a deeper sauce)
-
1–2 sprigs fresh rosemary
-
1 tbsp soy sauce or Worcestershire sauce
-
1 tbsp olive oil
-
Salt & pepper to taste
For the Sweet Potato Mash
-
2 medium sweet potatoes
-
1 tbsp butter
-
1–2 tbsp milk or cream
-
Salt to taste
For the Green Beans
-
150–200 g green beans
-
1 tsp olive oil or butter
-
Pinch of salt
-
Pinch of black pepper
Instructions

Step 1: Brown the Beef
-
Heat olive oil in a pot over medium-high heat.
-
Season the beef generously with salt and pepper.
-
Sear all sides until browned — this builds flavor.
-
Remove the beef and set aside.
Step 2: Build the Sauce
-
In the same pot, add sliced onions and cook until soft and golden.

Add garlic and carrot; sauté until fragrant.
-
Stir in tomato paste and let it caramelize for 30 seconds.

Add rosemary, soy/Worcestershire sauce, beef broth, and crushed tomatoes.

Return the beef to the pot, making sure it’s mostly submerged.
Step 3: Braise Until Tender

Cover with a lid and simmer on low heat for 2–2.5 hours, or until the beef shreds easily.
(Alternatively: bake at 150°C / 300°F for the same amount of time.) -
Adjust seasoning with salt and pepper.

Remove rosemary sprigs before serving.
Step 4: Make the Sweet Potato Mash

Peel and chop sweet potatoes.
-
Boil until soft (about 12–15 minutes).
-
Drain and mash with butter, milk/cream, and salt.
-
Mix until smooth and creamy.
Step 5: Cook the Green Beans

Trim the ends of the green beans.
-
Blanch for 2–3 minutes in boiling water, then drain.
-
Toss with olive oil/butter, salt, and pepper.
-
Keep slightly crisp for the best texture.
Step 6: Plate the Dish
-
Spoon a generous amount of sweet potato mash onto the plate.
-
Add a serving of braised beef with onions and sauce.
-
Place green beans on the side.
-
Garnish with fresh rosemary if desired.
Optional Upgrades

Add red wine to the braising liquid for deeper flavor.

Mix garlic into the sweet potato for extra aroma.

Finish green beans with lemon zest for freshness.
