Grilled Chicken and Pineapple Salad with Creamy Dressing

Ingredients

For the Grilled Chicken

  • 2 chicken breasts

  • 1 tbsp olive oil

  • 1 tbsp soy sauce or lemon juice

  • 1 tsp garlic powder

  • 1 tsp paprika

  • Salt & pepper, to taste

For the Salad Base

  • 3 cups mixed greens (lettuce, spinach, arugula, or romaine)

  • A handful of cherry tomatoes, halved

  • 1/4 onion, thinly sliced (optional)

For the Pineapple

  • 1–1.5 cups fresh pineapple, cut into cubes

  • 1 tsp honey (optional)

  • A little chopped parsley or cilantro for garnish

For the Creamy Dressing

  • 2 tbsp mayonnaise

  • 1 tbsp Greek yogurt or sour cream

  • 1 tsp Dijon mustard

  • 1 tsp lemon juice

  • 1 tsp honey

  • Salt & pepper, to taste

  • Water to thin, if needed


Instructions

1. Marinate and Grill the Chicken

  1. Rub chicken with olive oil, soy sauce/lemon juice, garlic powder, paprika, salt, and pepper.

  2. Let marinate for 10–20 minutes (or longer if you want deeper flavor).

  3. Heat a grill pan or outdoor grill.

  4. Cook chicken for 5–6 minutes per side, or until fully cooked and slightly charred.

  5. Rest for 5 minutes, then slice.


2. Prepare the Pineapple

  1. Add pineapple cubes to a dry pan or grill.

  2. Sear for 2–3 minutes, just until lightly caramelized.

  3. Optional: drizzle with a tiny bit of honey while warm.

  4. Add chopped parsley/cilantro to finish.


3. Make the Dressing

  1. Whisk mayo, Greek yogurt, Dijon mustard, lemon juice, honey, salt, and pepper.

  2. Add a splash of water if you want a thinner drizzle consistency.


4. Assemble the Salad

  1. Fill your bowl with mixed greens.

  2. Add cherry tomatoes and onion slices.

  3. Arrange grilled chicken on one side.

  4. Add the caramelized pineapple on top.

  5. Drizzle generously with the creamy dressing.

  6. Serve immediately.
