Ingredients (Serves 1)
For the Pancakes

1/2 cup all-purpose flour

1 tsp baking powder

1 tbsp sugar (optional, for lightly sweet pancakes)

1/4 tsp salt

1/2 cup milk
-
1 egg
-
1 tbsp melted butter or oil

1/2 tsp vanilla extract (optional)
For the Fried Egg
-
1 large egg
-
1 tsp butter or oil
-
Salt & black pepper, to taste
For the Sides
-
1/2 ripe avocado, sliced
-
1/2 cup sautéed spinach or greens
-
Fresh strawberries
-
Chili flakes or sesame seeds (optional, for greens)
Instructions

1. Make the Pancake Batter
-
In a bowl, whisk together flour, baking powder, sugar, and salt.

In another bowl, whisk milk, egg, melted butter, and vanilla.
-
Pour wet ingredients into dry ingredients and mix until just combined.
-
Do not overmix — a few lumps are fine.
2. Cook the Pancakes
-
Heat a non-stick pan over medium heat and lightly grease it.
-
Pour small portions of batter to form mini pancakes.
-
Cook for 1½–2 minutes until bubbles appear on the surface.

Flip and cook another 1–1½ minutes until golden.
-
Repeat until batter is used. Set aside.
3. Cook the Egg
-
Heat butter or oil in a pan over medium-low heat.
-
Crack the egg into the pan.
-
Cook until the white is set and the yolk is still runny (or to preference).

Season with salt and black pepper.
4. Prepare the Sides
-
Lightly sauté spinach with a drop of oil until wilted, season with salt.
-
Slice avocado and sprinkle lightly with salt and seeds if desired.
-
Wash and prepare strawberries.
5. Assemble the Plate
-
Arrange pancakes on one side of the plate.

Add the fried egg next to them.
-
Place avocado slices, sautéed greens, and strawberries around the plate.

Sprinkle black pepper and chili flakes if desired.
