Strawberry Piña Colada with Malibu Frosting



Ingredients:

For the Cake:

  • 2 cups all-purpose flour

  • 1 cup granulated sugar

  • 1/2 cup shredded coconut

  • 1 tsp baking powder

  • 1/2 tsp salt

  • 1/2 cup butter, softened

  • 1/2 cup coconut milk

  • 1/2 cup pineapple juice

  • 1/4 cup Malibu rum (or coconut rum)

  • 2 large eggs

  • 1 tsp vanilla extract


Instructions:

1.  Preheat the oven to 350°F (175°C). Grease and flour a cake pan or line it with parchment paper.

2.  Mix dry ingredients: In a large bowl, combine the all-purpose flour, granulated sugar, shredded coconut, baking powder, and salt. Stir well to evenly distribute.

3.  Cream butter: In another bowl, beat the softened butter until creamy and smooth.

4.  Add wet ingredients: To the butter, add the coconut milk, pineapple juice, Malibu rum, eggs, and vanilla extract. Mix well until everything is combined.

5.  Combine wet and dry: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Do not overmix to keep the cake light and fluffy.

6.  Pour batter: Pour the batter into the prepared cake pan, smoothing the top with a spatula.

7.  Bake: Place the pan in the preheated oven and bake for about 35-40 minutes, or until a toothpick inserted into the center comes out clean.

8.  Cool: Remove the cake from the oven and allow it to cool in the pan for about 10 minutes. Then transfer to a wire rack to cool completely.

9.  Prepare frosting: Once the cake is completely cool, frost with Malibu frosting (recipe for frosting can be prepared separately or purchased).

10.  Serve and enjoy!
